Can we say YUM?? Yum. This recipe is SO pleasing to the eyes and to the tastebuds. In fact, I may have had it with my dinner last night. There is no “may” – I totally had it with my dinner. With being pregnant, and being at home, it’s more important than ever to be more intentional about finding balance in my everyday life. And Greek yogurt is a favorite around here. We use it in so many sweet and savory ways. Sometimes my perfect breakfast is just some scrambled eggs and plain Delta® Greek Yogurt with honey drizzled on top for sweetness. And the vanilla flavor doesn’t need any honey at all! Since none of us eat mayo, we use the plain flavor as a substitute when we’re making egg salad and deviled eggs. Yogurt Rainbow Parfait Recipe:
What You Need:
Delta® Greek Yogurt – Vanilla 0% Fat
Strawberries, or other red fruit
Clementines, or other orange fruit
Pineapple, or other yellow fruit (like mango)
Kiwi, or other green fruit (like grapes)
Blueberries, or other blue fruit
Purple grapes or other purple fruit
What You Do:
1 – First, assemble and prep your ingredients together in bowls or on a cutting board.
2 – Then, make layers! I like to go yogurt first, and then fruit, and then more yogurt.
3 – And then top with granola and maybe a drizzle of honey.
4 – Lastly, enjoy!
*If you have larger glasses, the best way to enjoy these is a layer of yogurt at the bottom, and then between each fruit. So it goes yogurt, fruit, yogurt, fruit, etc.
