I don’t know about you, but weekday winter mornings are NOT my strength.

In fact, that’s why I recently wrote a blog post about winter morning hacks! I wanted to spread joy and inspiration, because in New England, winters can feel difficult and endless. My last tip was to have something to look forward to every morning – like a little treat, a cup of coffee, or a special breakfast. And that’s where Handsome Brook Farm eggs come in!

Eggs are my favorite breakfast item. They’re a great source of protein, and they contain beneficial vitamins and nutrients. The thing is – not all eggs are created equal – and egg labeling can be confusing. Certified pasture raised eggs means that the hens are raised on grassy pastures with room to roam free, forage, and get plenty of sunshine and fresh air. And studies show that these eggs are more nutritious than any other types of eggs. My recipe is quick, easy and nutritious – and designed (by me) to get my family out of the house on time, and happy. We love scrambled eggs, fried eggs, Eggs Benedict, eggs on toast, and these delicious Mini Veggie Quiches. They make us all happy.

Mini Veggie Quiches

Prep Time: 20 minutes

Cook Time: 35 minutes

Total Time: 55 minutes

Mini Veggie Quiches


  1. 8 Handsome Brook Farms eggs
  2. 3/4 cup whole milk
  3. 1.5 cups shredded Cheddar cheese
  4. 1 cup chopped broccoli
  5. 1/2 cup diced red peppers
  6. 1 dash each of salt and pepper


  • 1. Preheat oven to 350° F
  • 2. Crack eggs into a large bowl and whisk in milk, salt and pepper, and cheese
  • 3. Add red peppers and broccoli
  • 4. Grease a muffin pan and spoon in mixture evenly
  • 5. Bake for 35-40 minutes until tops are puffy
  • 6. Remove them carefully and enjoy!


Quiches can be frozen or kept in the fridge for a delicious breakfast every day this week!
