Ok, maybe you don’t but I sure do!

A good vegetable stir fry is everything. And then you have two choices – you can make it with rice or you can make it over pasta. You can also be totally bold and make it over both, which Cassidy has done many times. That said, the kids love noodles! In fact, we have two noodles restaurants right in our downtown. One has been there for ages and is very beloved, but I swear I can always taste cilantro in everything they make – even when they say it’s not there! The other noodles place is brand new and Cassidy got some chicken broth ramen for lunch over the weekend, and that helped me with my cold.

Noodles rock, and you know what else does? A rainbow of vegetables, because who doesn’t love rainbows and noodles?

Chinese Noodles Vegetable Stir Fry Recipe:

What You Need:

6 oz. Chinese Noodles or Ramen, cooked
1 cup Broccoli, chopped
1 Red Pepper, chopped
1-2 cups Red Cabbage, chopped
½ cup Shredded Carrots
2 Tbsp. Canola Oil
1 Tbsp. Sesame Oil
½ cup Soy Sauce
2 Tbsp. Ketchup
¼ cup Worcestershire Sauce
1 Tbsp. Sriracha
2 tsp. Chopped Ginger
1 Tbsp. Sugar (optional)

Chinese Noodles Vegetable Stir Fry Recipe

What You Do:

1 – First, in a skillet, heat the canola oil and add in the broccoli, red pepper, cabbage, carrots, and ginger

2 – Then cook for 9-10 minutes until tender

3 – Next in a bowl, mix the soy sauce, ketchup, Worcestershire sauce, Sriracha, and sugar

4 – Then add this to the vegetables and mix together

5 – After that, mix the sesame oil into the cooked noodles and add them to the vegetables – stir everything together

6 – Lastly, it’s ready to eat! It’s a simple and delicious vegetarian meal sure to please all

And, that’s it! It’s such an instant hit in our house. We’re happy because there are colorful vegetables and happy kids. The kids are happy because there are colorful vegetables that they like, as well as noodles. Noodles are always fun.

Also, you can reduce or cut out the spicy elements if they cause a problem. In our house, ginger is in moderation.

  1. I think I could eat noodles on the daily. Noodles with healthy vegetables?? Sign me up! Glad you have a hit in your house and that the kiddos like this one too. Also I love that Cassidy eats his noodles with rice, LOL!!

  2. Rainbow, noodle vegetables are now my favorite thing. I LOVE noodles. The name is just epic anyways, but alas I am trying KETO out for a while, but I am pinning and making this awesomeness soon!
