Basically I’m always celebrating National Popcorn Day and I’m always celebrating love as well. This is such a weird point of winter. Everything is sort of iced over and a little miserable, and I keep dreaming of warm and sunny beaches. That said, I also adore the cozy comforts, like our thick comforter, waking up to Lucy sleeping on my feet, and Cassidy making a warm batch of buttered popcorn. I’m generally a savory popcorn person, but there’s something about this here recipe that makes me so happy. It’s festive and delicious. I think you’ll enjoy the recipe too!
Valentine’s Day Popcorn Recipe:
What You Need:
6 – 8 cups popped popcorn, buttered and salted if desired
1 package (12 ounces) white baking chips
1 Tbsp and 2 tsp coconut oil or vegetable shortening, divided
½ cup bright pink candy melts
½ cup red candy melts
Valentine’s Day sprinkles
Yield: 6 – 8 cups
What You Do:
1 – First, line two large baking sheets with waxed paper, and then spread popcorn over waxed paper
2 – Place the white chocolate and 1 tablespoon coconut oil or vegetable shortening into a microwave-safe bowl
3 – And then microwave the chocolate on high for 1 minute
4 – Stir vigorously to allow the chocolate to continue melting with the residual heat.
5 – Return the chocolate to the microwave and heat in 15-second intervals, stirring well between each, until the chocolate mixture is smooth
6 – Pour the chocolate over the popcorn and toss to coat, and then spread popcorn back into an even layer
7 – Allow the chocolate to set completely; then break large sections of the popcorn apart
8 – Place the bright pink candy melts into a microwave-safe dish with 1 tsp coconut oil or vegetable shortening into a microwave-safe bowl
9 – Microwave the candy melts on high for 1 minute, and then stir vigorously to allow the candy melts to continue melting with the residual heat
10 – Return the candy melts to the microwave and heat in 15-second intervals, stirring well between each, until the candy melts mixture is smooth
11 – Transfer the melted candy into a zip top freezer bag, and then set aside
12 – Repeat the melting process (step 4) with the red candy melts
13 – Then, transfer to another zip top freezer bag
14 – One at a time, snip a corner from the freezer bags and drizzle melted candy coating over the popcorn
15 – Add the sprinkles over the wet candy coating
16 – Allow candy coating to set completely before breaking into pieces – to speed the process, place the popcorn in a refrigerator or freezer just until set
