I know it’s always time for mini pancakes, and you can dress these up any which way you want! I also can see the heart decorations being good for an anniversary, or a wedding day, or a day after a wedding day. Whatever! I was at Whole Foods over the weekend and I saw a box of mini chocolate chip pancakes that excited me. I wound up buying the pink blueberry frozen waffles but I couldn’t stop thinking about those mini pancakes and how delightful they can be. So I have been working up a good Valentine’s breakfast recipe for awhile. If you have followed my blog for awhile, then you already know that I’m all about the Valentine’s Day recipes. This year I have a fresh new batch for you! I’m pretty sure I republished a lot last year because, new baby.
Valentine’s Day Mini Pancakes Recipe:
What You Need:
1 cup flour
1/2 cup milk
1 egg
1 tsp baking powder
Pinch of salt
1 tsp vanilla extract
2 drops red food coloring
2 Tbsp vegetable oil
Large fruit hearts – like apples, bananas, melons, strawberries
2 Tbsp honey
2 Tbsp butter, or how much you need for frying
What You Do:
1 – First, in a bowl, mix your dry ingredients (flour, baking powder, salt).
2 – And then in another bowl, mix egg, milk, honey, vanilla, and vegetable oil.
3 – Then, pour the liquid mixture into the dry mixture and combine it together.
4 – Add your food coloring (careful with amount) and mix everything until you reach desired batter color.
5 – Pour your dough mixture into a pastry bag to squeeze out mini pancakes.
6 – Fry the mini pancakes on both sides of the pan, using a small amount of butter.
7 – Then, cut your fruit pieces into thin slices, and use a heart cookie cutter.
8 – Stack five mini pancakes at a time, and use a bamboo skewer to top each stack with a fruit heart!












Oh, so cute! I used to make pink pancake with pink milk on Valentine’s day. Have to admit I never had the cute hearts sticking out on top, though, that’s definitely fun. Doing things like this teaches children that Valentine’s day is for everyone, not just romantic couples.
