Cassidy has a tendency to make memorable party recipes for friends and family that has them dreaming about the food and asking for it every year. One of those recipes is for scallops. He makes his own spice rub and cooks those babies up, and has people begging for more. I remember the first time he made them. I was having two friends over from my baby group, and we got distracted and just talked and talked around the old dining room table. Our babies were about to turn one and we had so much to talk about. As we were talking, a big bowl of pasta appeared in front of us. Then, the scallops he had made us.
My friends were hooked. I’m not really a scallops fan, but I realized the beauty of how my husband made them. He brought them to a party his brother threw, and they still talk about them. When I was trying to think of an amazing recipe to make for March college basketball games, I thought of something delicious – Cassidy’s scallops, but in BLT form. Had it been done?
As a non sports family, we actually celebrate college basketball quite a bit, ever since our favorite CT team won two years ago. Scarlet and Cassidy screamed louder than I’ve ever heard, and now they take in an annual game with my father-in-law. I think Des will surely join them when he’s a bit older, but for now, we stay back and watch the game – looking for our loved ones. And whether we’re watching at home as a family, pre-gaming before attending a game, or having people over to watch a game, we have to be prepared with food and supplies. Walmart is our best place to go for basketball watching season.
By “supplies”, one of the most important ones for me is Advil. I get occasional stress headaches, and also sinus headaches from the changing of the seasons. I also am still a beginner at Pure Barre, and the exercise still makes my muscle ache.

Simple as that! We get our scallops, lettuce, tomatoes and bacon at a fresh and local market. For everything else and for all party, food and comfort needs, I head to Walmart. Advil is at the top of my shopping list. I want to be ready for anything!
