And you may be thinking, “..but, Tamara. You’ve already shared Rainbow Cupcakes recipes and called them the most cheerful rainbow cupcakes ever.” And you may be right. My memory works correctly. I just think this is the NEXT wave of cheerful cupcake recipe. For me, it’s about our numbers not doing so well in Massachusetts. And it’s the post-birthday blues. Birthdays during pandemics can be hard! Mine was pretty wonderful with my family, but it’s a weird time in general. So many people forgot my birthday who otherwise wouldn’t have. And this really isn’t a “woe is me” thing. Let’s face it – we’re all going to have some effects of this pandemic added to our birthdays. I’m sad that it wasn’t the big birthday I had wanted, but I’m mostly happy that it was super special. I’ll have to share more on that. Sometimes I forget to share here the big things that are happening. I’m also sad the birthday is over, because I miss that special feeling.
The Most Cheerful Rainbow Cupcakes Ever:
What You Need:
6 Prepared Cupcakes, whether from-scratch or store-bought
Blue Funfetti Frosting
6 Rainbow Licorice Ropes (Found on Amazon)
What You Do:
1 – Place frosting in a piping bag or large baggie and snip corner.
2 – And then frost cupcakes.
3 – Cut about a 1/3 off the licorice ropes and set those aside to snack on later. Then, insert the longer pieces into the middle of the cupcakes. Make sure to stay towards the middle and not get too close to the edge.
4 – Place three marshmallows on each side to represent the clouds.
5 – Lastly, serve and enjoy!!
