I don’t often impress myself, but Thanksgiving Charcuterie with Cranberry Brie is impressive.

If I do say so myself, anyway. Thanksgiving is an odd duck, isn’t it? Surrounded by two very large and beloved holidays, but I think it’s safe to say that Thanksgiving holds its own. It’s a beautiful day in a rather gray and dark time of year. Sometimes it coincides with Hanukkah, which brings a nice light into the darkness, celebrating thankfulness, light, and hope within one weekend. I like years like that. It can be hard when you have such a big family, to figure out what to do for Thanksgiving. Do we drive to NJ? Do we host? Maybe we go to the in-laws’ house. Sometimes, the Florida in-laws are here too. I figure that next year, we will host, because we will have four kids, so this year I think we are going to Connecticut. Not a lot of travel, and something more unique than usual. And hey, as long as there’s charcuterie and mashed potatoes, I’m happy.

Thanksgiving Charcuterie with Cranberry Brie:

What You Need for the Brie:

Equipment:
Parchment lined baking sheet
Cookie cutter
Knife
Small saucepan

Food:
1 9.5 oz round Brie cheese
1 cup fresh cranberries or 1/2 cup cranberry sauce
1/4 cup honey
1/4 cup chopped walnuts or pecans
1 Tbsp unsalted butter
1/4 tsp salt
1 tsp fresh thyme
1 tsp lemon juice
1/4 tsp pepper

What You Do for the Brie:

1 – First, preheat the oven to 350 and then add the Brie to a parchment-lined baking sheet.

2 – Then, push the cookie cutter through the cheese to create the center focal point.

3 – If the Brie is thick, slice the cut-out while keeping the shape; then return the cheese back to the center.

4 – Place in preheated oven for 5-8 mins, until softened.

5 – Cook the cranberries (or sauce), honey, butter, thyme, lemon juice, nuts, salt, and pepper on the stovetop.

6 – And then bring to a boil, stirring occasionally, and the mixture will thicken.

7 – Remove from heat and let cool for 5-10 minutes before adding to center of Brie.

Carved or deli turkey slices
Dried cranberries
Walnuts or pecans
Crackers
Thinly sliced french bread loaf
Fresh thyme or rosemary
Grapes
Apple Slices paired with a dip (caramel, pumpkin spice or maple syrup)
Sliced cheese
Cranberry Scones
Granola

1 – First, create the Cranberry Brie and then place it as an anchor on your board.

*Tip: If using a small board, place it directly in the center and build around. If using a larger board, place it off-center.

2 – Then, add small bowls to hold dipping sauces, syrups, granola, or nuts.

3 – Begin building your board with fruits, meat, cheeses, and pieces of bread.

*Tip: Remember to keep bread and crackers away from things that are naturally wet, like fruit.

4 – Use nuts and cheeses as dividers to keep the board looking plentiful.

5 – If your board is too small to hold everything, you can create smaller plates around the board to hold bread and cheese.
