Ooey Gooey Raspberry Apple Pocket Pies

I think if you know me, and read this blog, you know that I love pie.

Cream pie, banana pie, chocolate peanut butter pie (my true favorite), and then there’s the one fruit pie I’ve learned to love the most over the years – Raspberry Pie. My mom used to make a raspberry pie from scratch – kneading and rolling and using cookie cutters – with her floured elbows, floured turtleneck, and raspberry stains. I can still taste it after all of these years.

With my love of pie, and the kids’ fierce love of raspberries, (they can decimate an entire pint in five minutes flat) I hid two pints away in the vegetable drawer of the fridge so that I could brainstorm my new idea – mini pies. Hand pies. Bite-sized pies filled with tart and sweet fruit, and not much else. Raspberries were my first choice because they’re in season here, and they remind me so much of my mom’s homemade raspberry pie (hint to you, Mom) and then I decided that peeled apples would be a great addition as well. They bake wonderfully and will retain just the slightest amount of crispness, but will mostly just melt into the ooey gooey raspberry/sugar concoction. Did I mention the ooey gooey raspberry/sugar concoction? It’s messy!

Luckily for me, I have NEW ocelo™ No-Scratch Scrub Sponges. And luckily for all of us, I have a recipe for these delicious little pies. Call them hand pies. Call them mini pies. I personally call them pocket pies. Just call them delicious!

Raspberry Apple Pocket Pies!

Ooey Gooey Raspberry Apple Pocket Pies

Prep Time: 30 minutes

Cook Time: 20 minutes

Total Time: 50 minutes

Yield: 12 pocket pies

Ooey Gooey Raspberry Apple Pocket Pies

These are messy, yummy, tart, sweet, party-friendly, kid-friendly, sponge-friendly, and all around awesome! Try them with your fruit of choice.


  • Circle/Star/Heart/etc. cookie cutters
  • 1 package ready-made pie crust or your best homemade pie crust recipe
  • 1 large egg, beaten in a bowl
  • 12 ounces (2 packages) raspberries
  • 1 large apple, peeled
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 2 tsp organic vanilla extract


  1. Preheat oven to 375
  2. Line a large cookie sheet with parchment paper
  3. Combine raspberries, sugar, cornstarch, diced apples, and vanilla extract and blend together evenly
  4. Lightly flour a cutting board or other large surface and unroll your pie crusts
  5. Cut a round circle of dough, brush with egg, and top with your fruit/sugar mixture
  6. Then cut out a second circle and press firmly around the edges to seal the two circles into one hand or pocket pie
  7. Use a fork for decorations and to make sure it's sealed
  8. Keep going until you run out of dough completely
  9. Brush the tops of your pies with egg and bake for 20 minutes or until golden
  10. Let cool and serve
