Mini Strawberry Santa Hat Cupcakes

These Mini Strawberry Santa Hat Cupcakes are fun and festive. The perfect easy holiday recipe to do on Christmas Eve or Christmas Eve Eve. So get in the kitchen and make this delight!

The stockings were hung on the chimney with care, in the hopes that we’d all get ourselves to New Jersey this weekend!

Boy, a whirlwind. A WHIRLWIND. When was the last time I relaxed? Breathed? Watched a bad movie? Sat and wrote heart-wrenching stuff to you? I do it all in pieces. I’m looking forward to doing more personal writing, but the personal storytelling has been coming out, little by little. I have a longterm relationship in my life that’s coming to a pause until April, while she travels, and she left me with a thoughtful card full of so much inspiration and hope, and life. Breath.

It was all of her hopes and thoughts for me during this time apart.

I’ve been playing a weird numbers game lately. It has to do with the number of things I have and the number of such things I want. It might sound silly, but it’s not. For example, I have one partner and that’s all the partner I can handle. I have only one working bathroom, and that’s one less than I feel comfortable with. I have three jobs and that’s one more than I feel like I’m good at doing at once. And I have two kids, and if I were to have a third on the sooner side, I’d have to give up some of the above. (although I wouldn’t give up the bathroom – I’d add one!) So much is swirling around me. It feels achy and panicky and also safe and warm. The other night, I kept Cassidy up until 4:00am because that was the time I had to tell him literally everything in my brain. I think he liked it. Sometimes everything feels too overwhelming, but it’s because it is.

It’s a jumping off point. Where you land is anyone’s guess, but you get to set up the safety net. Do it with care.

It seems like a silly segue into Mini Strawberry Santa Hat Cupcakes, but they’re soft and pillowy and they’ll occupy your brain and your hands and maybe even your heart. Time. Time together. And time for yourself. Time with yourself. Just time.

Hot Cocoa Cupcakes

Well, everyone, we’re winding down into the home stretch and I only have one thing for you today. Cupcakes.

These Hot Cocoa Cupcakes are SO easy and such fun. Bring them to the class holiday party, serve them for the holidays, or make them all winter long! #recipe

I thought I’d have more to say, but after three busy jobs, two loud kids, and staying up WAY too late last night after Cassidy’s company holiday party (with only a cranberry/pineapple mocktail under my belt), I’m just DONE. DONE.

It’s probably good DONE, but it’s a DONE. The only prescription now is long bubble baths, Hallmark and Lifetime Christmas movies, and a weekend without working too much. I can’t wait to take actual time off. I’m not quite there yet, though.

And so I’ll give you what we’re working on here:

Hot Cocoa Cupcakes

Ingredients

  • 6 Chocolate Cupcakes, prepared and unfrosted
  • 1 Can Vanilla Marshmallow Frosting
  • ½ cup Mini Marshmallows
  • ½ cup Mini Chocolate Chips
  • 8 Mini Candy Canes
  • Christmas Sprinkles

Directions

  1. Use a piping bag and tip to put a swirl of frosting in the middle of each cupcake to resemble whipped cream on the top of hot cocoa. You can put a dollop with a spoon if you don’t have a piping bag. Just make sure to leave the edges of chocolate cake showing.
  2. Sprinkle on some chocolate chips and marshmallows.
  3. Take 2 of the candy canes and crush them into fine pieces. Take the other 6 candy canes and cut off about 2 inches of the straight end, so you have the entire rounded part left (Scissors work great when cutting the candy canes).
  4. Sprinkle a little of the crushed candy canes or Christmas sprinkles on top of the frosting.
  5. For the cup handle, hang one of the candy cane pieces onto the side of each cupcake. Press one end to the candy into the top of the cupcake on the edge and let it hang down on the side of the cake liner.
  6. These cute little “cups of hot cocoa” are a great fun holiday treat!
