I bet you thought I was done talking about tacos and taco dip this week, right? I’m not!

I will never be done. I have no trouble talking about how to go from this (below) to that (above).

I love to make cheesy, meaty, beany foods. When my mom makes her delicious taco dip, it’s one of my favorite recipes of all time? All I know is that taco dip to party guests is like a jar of honey to a field of bears. It’s a hot ticket dish!

I always wanted to try it out, bite-sized, individual-style.

It’s always a little funny to put out a big dip at a party. Sometimes someone (no names mentioned, ME) might eat all the cheese and olives. Someone else will eat the beans first. I decided to make individually portioned taco dips because they’re fun, party-sized, and delicious. No double dipping! This is the perfect party recipe for college football time. I have certainly been to my share of games, because my sister was on the dance team at our college, and there’s nothing like sitting in the stands with hot chocolate and a ton of team spirit. Almost as good? Tailgating before the game in the parking lot!

You know what else is good? Watching with friends at home too. I remember going to a game-watching party after I had graduated and I brought my taco dip. People loved it but we were all scattered at different points of the room and had to pass the dip around! These individually portioned taco dips will make sure that doesn’t happen anymore.

Taco Dip Shooters

  • 8 party cups (clear)
  • 1 cup sour cream
  • 1 cup refried beans
  • 1 Tbsp taco seasoning
  • 1 cup guacamole (homemade or not)
  • 1/2 cup shredded sharp cheddar
  • 1/4 cup sliced black olives
  • Triangular corn chips
  • Salsa

  1. Start with clear party cups and make a refried beans layer as the first one
  2. Then add your guacamole evenly into each cup
  3. Blend your sour cream and taco seasoning in a small bowl, and spoon that into each cup
  4. Add a thin layer of cheese to each cup
  5. Spoon out salsa equally
  6. Add another layer of cheese
  7. Garnish with sliced olives
  8. Top each cup with a triangular corn chip and make sure to serve remaining chips on the side

You can assemble these shooters and keep them in the fridge for up to eight hours.

You can change the order of the layers, but I always love a bean base. Some people like to mix their taco seasoning with the beans, and I prefer to mix it with the sour cream. You can also use Greek yogurt, or a mixture of sour cream and Greek yogurt. Other favorite layers for party guests include green onions, jalapeño peppers, corn, and black beans too.
