I have to tell you something – this popcorn snack mix is SO GOOD!

I am NOT a sweet and salty person (or sweet and crunchy person) usually. I know that sounds weird and limiting, because I DO love sweet foods and salty foods, but generally I like them one after the other, in any order and then reverse the direction. However, I rarely eat them together somehow. This popcorn snack mix is not my only exception, but my truest exception.

I’m thinking about it. Right now.

We had the best laid plans yesterday, and you know what they say about the best laid plans. Scarlet was to be a reindeer – for the second year in a row – in two performances of our town’s ballet production of “The Nutcracker.” We had brunch plans made and laid out for nine people – delicious and ready and waiting – when she got sick only minutes before the first guests were due. Oh no! This time of year can knock you off your feet. She had to miss her performances, but we didn’t cancel brunch. In fact, I think the inclusion of five of her six grandparents into the household boosted her morale quite a bit.

I had planned to make this “famous” popcorn snack mix later in the day after the performances, but something about the sad and canceled state of the day encouraged me to make it earlier. So I made it. We decided it was the best thing ever. I need you guys to make this just so you can say to me – “Yes, that is the perfect party recipe. I can’t believe how much everyone loved it.” And maybe you’ll thank me, because it’s incredibly happy-making. And it’s easy! Start with Pop Secret.

And then, inspiration will hit you!

Here it is: Sweet and Crunchy Popcorn Snack Mix:

Sweet & Crunchy Popcorn Mix

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 1 hour, 5 minutes

Sweet & Crunchy Popcorn Mix

Ingredients

  • 1 packet of Pop Secret Kettlecorn - popped
  • 2 cups of crispy cereal - corn, rice, organic, etc.
  • 2 cups of peanut butter puffs cereal
  • 2 cups of pretzels
  • 8 ounces of milk chocolate candy pieces
  • 1/2 cup of almonds or peanuts or both
  • 1 stick of butter
  • 2 tablespoons of all-purpose flour
  • 1 cup of light brown sugar
  • 1/2 cup of corn syrup
  • 1/2 cup peanut butter

Instructions

  1. Line a large baking sheet with waxed paper
  2. Pop the popcorn and add to a large mixing bowl
  3. Mix in the cereal(s), milk chocolate pieces, pretzels and nuts
  4. Meanwhile melt butter in a large saucepan over medium
  5. Whisk in flour until smooth (a few minutes)
  6. Add light brown sugar
  7. Add corn syrup
  8. Bring to a boil, stirring occasionally, until smooth (1-2 minutes)
  9. Add peanut butter and stir until creamy and smooth
  10. Remove from heat and mix with cereal/popcorn mixture until coated
  11. Spread snack mix over waxed paper and cool for at least 30 minutes
  12. Store in an airtight container

I can barely tell you in words, how much I love popcorn in all forms. I even have movie theater popcorn leggings! I’ve never met a bowl of popcorn I didn’t love, as it’s one of my top five favorite foods. When I met my husband, he worked for a special effects film company. We talked about going to the movies and he said he loved to get a bucket of popcorn and then put sweet candy in it too, with all that buttery goodness. Don’t knock it until you try it because my recipe calls for butter AND candy and it works well. It’s great for family time. It’s great for parties. It’s perfect for family movie parties.

Cooking the sauce makes the kitchen smell incredible.

My kids have been slow to catch on, but sure enough, they now love popcorn. Sweet, salty, anything but completely plain, I love to hear the four of us munching on popcorn when we’re sitting together and watching a movie. It’s become a special occasion thing we do during school vacations, and since our winter vacation is coming, I learned a new way to make a whole night out of it with this popcorn snack mix recipe. It’s like the best of everything, all mixed together in a bowl!

It’s special when you can recreate a special childhood memory/event with your own kids. It shows you how far you’ve come in life (having a family and all), but also how some old favorites will always stay special in your heart. Popcorn and a movie.

And speaking of movies, Assassin’s Creed is coming to theaters December 21st, 2016! Cassidy and I saw a movie on Saturday night and saw so many trailers for upcoming movies – all out before Christmas. This is awesome for our date night.

    1. Nice! We’re trying to get a sitter for Des so that we can take Scarlet. We can go months without a date, and now we have three scheduled for one week! Ah, December.

  3. I love popcorn but never tried mixing it with other stuff. It’s my first time to see that kind of snack and I must say it looks so yummy and tempting! No wonder everybody loved it. Hmmm, the only sweet and salty combo I love right now is french fries + choco vanilla sundae.

  4. I’m so sorry Scarlet got sick. I saw that on Facebook, and I felt so bummed for her. Salty/sweet is my most favorite snack. I love to add m&m’s to popcorn! This looks SO good and I’m definitely making some this weekend. Hope Scarlet is feeling all better!

    1. It was really sad – but I’m at that point where immune systems are a bit better I think? I remember them both being sick CONSTANTLY two years ago. I really hope it gets better..
