I also remember the first time I had chocolate and peanut butter together. I couldn’t have been older then three or four (or even younger), and we were at a relative’s house during summer vacation. Someone taught my older sister how to break pieces of chocolate off a large chocolate bar and dip them right into a jar of peanut butter. I followed suit, and I was forever changed. The same thing happened with s’mores. My memory is even murkier, but I remember the taste and feeling.
This is my new favorite summer iced coffee recipe. Not only is it indulgent and delicious, but it’s a perfect party drink – and an easy one to make at that! I started making cold s’mores drinks for my kids last summer. They were cream based, and sometimes I even toasted the marshmallows a bit too. The drink is such a hit with both kids, and their friends, that I started to wonder if I should make it for the rest of us too? With summer get-togethers coming, the answer is a resounding YES.

The thing is, I have an iced coffee drink hack. It started when I was in Walmart recently and found my favorite International Delight® Iced Coffee. I got Caramel Macchiato and Mocha, and it comes in Vanilla flavor too!
See, this is what I love. It’s that coffeehouse taste without having to actually go to a coffeehouse. That’s why I build my drinks right at home! International Delight® Iced Coffee is fridge-friendly and ready to drink. You can pour it over ice.
I find it hard to go to the coffee shop this time of year. There’s the heat and the distance and the parking. That’s why I loved my home iced coffee! Mocha is a favorite because chocolate and coffee flavors are the perfect pair. Caramel Macchiato is reminiscent of that coffeehouse combo, but is fridge-friendly and ready to drink. You can’t beat that! I love to pour my iced coffee over ice on a warm morning. I love how affordable and convenient the iced coffee experience is with International Delight® Iced Coffee. No matter your favorite flavor, there’s a frosty glass with ice waiting for it.
That said, while iced coffee is the perfect drink to cool off with during the spring and summer, it’s also awesome to add to recipes! You already have the coldness and the flavor, and then you can get creative in the kitchen.

Ingredients
- 1 cup International Delight® Mocha Iced Coffee
- 1/2 cup marshmallow fluff
- 1 cup Milk (optional)
- 2 Tbsp. chocolate syrup or sauce
- Graham Cracker Crumbs
- Whipped cream
- Jumbo, flat marshmallows
Instructions
- 1. Pour coffee/marshmallow/milk (optional) into blender and blend on low until smooth
- 2. Fill glasses with ice
- 3. Drizzle chocolate syrup down the sides of the glass
- 4. Dunk the rims of your glass into chocolate syrup and then into graham cracker crumbs
- 5. Pour coffee mixture into glasses over ice
- 6. Top with whipped cream and more chocolate syrup drizzle
- 7. Cut marshmallows to sit on glass as a garnish
- 8. Enjoy!
Notes
If you like this drink even sweeter, add 1/2 tsp of sugar per serving

Oh, the ideas! If you don’t like coffee, maybe try it with chocolate milk? Adult get together? Add Kahlua, or flavored vodka (Vanilla, marshmallow, espresso, chocolate)? Make it a float and add ice cream? Oh, the possiblilities.
I can’t wait to try this warm this fall….maybe at a tailgate or bonfire!
