Oh my goodness – these Shortbread Streusel Pumpkin Squares!

Shortbread Streusel Pumpkin Squares are PERFECT! A recipe for a quick homemade dessert, with a crunchy crust and cinnamon streusel that melts in your mouth.

When Cassidy and I had our summer relationship over 15 years ago, a dream of ours was to have Thanksgiving altogether with both of our moms present. That I lived in NJ, he lived in California, and that I had never met his mom didn’t seem like obstacles at the time. We split before that could happen and spent two Thanksgivings apart, me at my cousin’s one year and a neighbor’s house the following year. When we got back together years later, it was October, and we knew we were going to make our dream come true. And it was fabulous. I love looking at photos of that time – we were so glowy and fabulous looking. The next year I was in San Francisco and couldn’t travel, but there have been many consistently wonderful Thanksgivings since then.

Cassidy makes a pumpkin surprise recipe which is a quick, easy pumpkin party recipe. And it’s a wonderful alternative to Pumpkin Pie. And now I have a new alternative that is DIVINE!

Shortbread Streusel Pumpkin Squares:

What You Need:

FOR THE CRUST
1 cup of flour
1/2 cup of butter
1/4 cup of powdered sugar

FOR THE FILLING:
1 can of pumpkin
2 eggs
2/3 cups of milk
1 teaspoon of vanilla
1 teaspoon of cinnamon
1/4 teaspoon of allspice

STREUSEL TOPPING:
1 cup of flour
1/2 cup of butter – melted
1/2 cup of powdered sugar
1 teaspoon of cinnamon

What You Do:

1 – First, make the streusel: combine the flour, powdered sugar and cinnamon in a bowl, and stir well to blend.

2 – Add the melted butter, and mix to coat all the flour mixture in the butter, until it forms small pea sized particles.

3 – Place the mixture on a parchment paper lined cookie sheet, and place in the oven at 400 degrees for about 20 minutes, or until the topping is golden brown.

4 – Turn the topping/streusel mixture halfway through baking with a spatula, to make sure it bakes evenly.

5 – When the streusel is golden brown, remove the cookie sheet to a wire rack to cool.

Then, make the crust:

6 – First, combine the flour and powdered sugar until mixed.

7 – Add the melted butter, and coat the flour in the butter until it forms a thick ball.

8 – Press the mixture into a 9 X 9 baking dish, and place in the oven at 400 for 20 minutes, and then remove and set aside.

9 – In the mixing bowl of a stand mixer, place the pumpkin, eggs, milk, and vanilla, and mix until well blended.

10 – Add the cinnamon and allspice, and mix on medium speed for about 1 minute until completely combined.

11 – Pour the pumpkin filling on top the crust in the 9 X 9 pan, and place it back in the oven and bake at 350 for 45 minutes or until a toothpick in the center comes out clean.

12 – When the pumpkin is done, remove it to a wire rack to cool, and spread the streusel topping evenly over the pumpkin.

13 – Let cool for at least 2 hours, and when ready to serve, cut into 2 X 3 inch squares, and top with whipped cream and a sprinkle of cinnamon. Enjoy!
