When I say I’m a breakfast person, that may be a bit of an understatement. I’m a breakfast enthusiast.

I have been known to have trouble sleeping the night before, because I can’t wait to eat breakfast the next morning. I have been known to make breakfast dates with friends who have initially asked for drinks dates, coffee dates, lunch dates or dinner dates. It’s just.. breakfast. That’s my flow time. That’s my happy time. That’s when I’m most creative.

That’s when I’m most ravenous.

As a child, I had trouble gaining weight and focusing in school so my doctor suggested I drink Carnation Breakfast Essentials®. My mind was blown! Now for the Strawberry Flavored Pancakes recipe! We used an easy recipe that Cassidy mostly knows by heart, but you can use any pancakes recipe. The key is to use a recipe that calls for milk so you can make strawberry milk, and thus, make Strawberry Flavored Pancakes! The powder is flavorful and will work for both color and flavor for getting pink, heart-shaped pancakes. You can also make your pancakes any shape you want, or use chocolate or vanilla Carnation Breakfast Essentials®.

Strawberry Flavored Pancakes For the 7-Day Challenge.

Yield: 12-15 pancakes

Strawberry Flavored Pancakes For the 7-Day Challenge.


  • 1 cup all-purpose flour, (leveled - I use a knife for that)
  • 1 packet strawberry Carnation Breakfast Essentials®
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons butter or oil
  • 1 large egg
  • 1 tablespoon vegetable oil


  1. In a medium sized bowl, whisk together the flour, sugar, salt and baking powder
  2. Pour the packet of strawberry Carnation Breakfast Essentials® into the cup of milk and stir well
  3. In another bowl, whisk together the strawberry milk, butter (or oil) and the egg
  4. Add the dry ingredients to the wet milk mixture and mix well, but a few small lumps are ok
  5. Cook until the pancakes have some bubbles and then flip carefully
  6. Use a heart-shaped cookie cutter if it's Valentine's Day

Then you get a wonderful, nutritious family breakfast.

I got my Carnation Breakfast Essentials® at Walmart in the cereal aisle, and I was able to get most of the other ingredients there as well. I decided to go with strawberry flavor because of Valentine’s Day, and it being Scarlet’s favorite.

Side dishes were added based on personal taste. I love my pancakes with eggs, fruit, and sausage or bacon.

  2. My son drinks vanilla Carnation Instant Breakfast in his milk everyday. He is barely on the growth chart for his weight so we have been using Carnation Instant Breakfast for years now to give him extra calories. It helps a lot with picky eaters.

    1. For some reason I had cereal before my workout yesterday. No idea why. I usually like cereal as a comfort item. Anyway I did drag a bit but ate protein after.
      I LOVE cereal, though.

    1. I’m actually more of a salty breakfast person. Today I had a broccoli scrambled eggs dish and an apple! Those pancakes are the stuff of weekend dreams for me, though!

  4. Breakfast food is definitely my favorite, and we always try to eat together as a family on the weekends. During the week, my husband and older son are out of the house by 5am – and I’m not interested in eating with them that early :)! Your pancakes look delicious!

    1. Wow, 5:00am! I’ve only ever had to get up that early for flights or whatnot and I generally can’t eat that early. It may have something to do with nerves, though. Maybe if I did it daily, I’d eat then.

  5. I’m such a breakfast person also and I will often go to bed looking forward to it!
    This is definitely my kind of breakfast, though during the week it is usually granola or overnight oats since we’re often trying to get out of the house early.

    1. Overnight oats is something I’ve never tried but always wanted to try!
      I love dreaming about breakfast before I go to bed. I often go to bed hungry because it interrupts my sleep if I eat close to bedtime, and yet, I get hungry every 2-4 hours so… boo!

    1. I will definitely let her know about her pajamas! It runs in the family. I sent my mom heart pajamas for Valentine’s Day and she was tickled pink!
      I haven’t gotten into smoothies ever. I have trouble with thick drinks, even milkshakes.
      I’m working on it, though. Baby steps.

    1. I used the chocolate flavor for chocolate milk yesterday and it was so good! And Scarlet drank it up, which is rare. I’m glad she got the protein and vitamins boost.

      1. When I say pancakes I mean = eggs and nuzest protein powder cooked in pancake form. I have not turned into the iHop queen over here! LOL! HOWEVER it has been SO FRIGGIN LONG since we last spoke, that you NEVER KNOW! I could have 10 kids too……

  12. Hi Tamara, breakfast is definitely the most important meal of the day and I’ve never let my lot leave the house without a decent (ish) one. I’m not sure I would pair strawberry pancakes with sausages and scrambled eggs though!

      And my daughter has trouble as well and when she asked for a strawberry milk this morning, I had no trouble giving her Carnation!

Thankfully, I am not that hungry in the morning – night time is my creative and munching time. Which is probably why I am on a fitness challenge. 🙂

          No, for real though. When I have too much chocolate around me, it turns me off and I want none of that. I swear to you. It’s so weird. I start craving vegetables even before I’ve had the chocolate.

  15. I used to drink Carnation Breakfast when I was in grad school. It was great for on the go plus I’m like you, I’m starving first thing in the morning! Of course now I want pancakes. 😉

    1. Oh, I know it! I haven’t had pancakes since the weekend and I miss them!
      Luckily I’ve had some great chocolate milk with the breakfast essentials.

  17. It’s great that so much emphasis is placed on breakfast now. It is such an important meal that is often neglected by people either because they don’t feel like it or because they don’t have time. Strawberries for breakfast – I think I could handle that each morning! 🙂

    1. I had a photo job this morning and I didn’t eat before it! Man, was that not a good idea. I needed the concentration!
      And strawberries always make me feel fancy.

  18. Awesome! I love breakfasts because yes, it’s when I’m at peace with myself.. Most of my breakfasts lately though are brunches because of my online job..pancakes are somehow my staple food!
