And everything Valentine’s Day does too. Last Valentine’s Day, was the day I took my first and only pregnancy test for Rider. I’m a bit stunned to be back into these year anniversaries already. Anyway, enough with that! Let’s talk cookies. Valentine’s Day. Due to the timing of the COVID-19 pandemic, this will be the first, and hopefully only, Valentine’s Day with this new reality hanging over us. We’re not going out to dinner, which we wouldn’t do with a baby anyway, but we’ll be staying home and making a special meal here. We have so much going on with the new and exciting expansion in our house, that it will be nice to enjoy all these little touches everywhere.
Stained Glass Cookies For Valentine’s Day:

What You Need:
1 cup unsalted butter, softened
1 cup granulated sugar
½ teaspoon salt
2 large eggs, room temperature
1 ½ teaspoons vanilla extract
3 ½ cups all-purpose flour, divided
24 clear hard candies in desired colors (Jolly Ranchers)
GLAZE: 1/4 cup powdered sugar, few drops of milk
Prep Time: 15 minutes
Chill Time: 1 Hour
Cook Time: 15 minutes
Total Time: About 1 ½ hours
Yield: About 24 cookies, depending on cookie cutter size
What You Do:
1 – In a large bowl, cream together the butter and sugar with an electric mixer on medium speed.
2 – Then, add the eggs, vanilla and salt and continue blending until thoroughly combined.
3 – Slowly add the flour, mixing just until combined.
4 – Cover the dough and place in the refrigerator for one hour.
5 – While the dough is chilling, preheat the oven to 350 degrees and line a baking sheet with parchment paper.
6 – Remove dough from the refrigerator and roll out onto a floured surface about a half of an inch thick.
7 – Cut into desired shapes, being sure to cut out hollow areas to place candy.
8 – Place shapes onto a baking sheet lined with parchment paper.
9 – Unwrap the hard candies and place into a plastic bag. Crush into small pieces.
10 – Place the candy in the hollowed out areas.
11 – Bake for 10-12 minutes or until the cookies are set and the candy centers are melted.
12 – Allow to cool on the baking sheet until the candy is completely cooled.
13 – Mix the glaze and drizzle over cookies when cooled.
