I can’t believe it, but today marks nine years of this blog. Today is coming in with a big bang, as Monday mornings do, with a snow day and with Des waking up with a fever, sore throat and cough. The poor kid never gets sick and was so confused by it. Confounded! He’s resting beautifully right now, with a stomach full of peanut butter toast – and the morning light shining his face just so. He also will not stop talking to me, which I suppose is a good sign, but it makes working incredibly difficult.
I have to keep this brief, which is challenging for me. Blogging is one of the great loves of my life and I don’t know where I’d be without it. I say it a lot and I’ll probably say it for decades to come, but I don’t see myself slowing down or stopping. I’ll change, which is good, and I’ll do things I used to say I wouldn’t do – which is good and probably bad too – but I’ve never even thought about letting go. I know I’m overdue for a redesign and I get better at either doing tech things, or hiring people to do the tech things. The design and words may change but the heart of it never will. I’m always still in here.
As you saw from my Pot of Gold Rainbow Cupcakes, we love cupcakes, and we have extra Extreme Airheads lying around. So we made an extra St Patrick’s Day treat with them! How adorable are these? And they’re easy to make on a snow day!
St Patrick’s Day Over The Rainbow Cupcakes:
What You Need:
1 box of White Cake Mix (plus ingredients needed)
1 container of White Icing
Icing Piping Kit and Tip
1 bag of Mini Marshmallows
1 package of Golden OREO Cookies
Gold Mist Food Paint (found in the cake decorating section)
1 package of Extreme Airheads
Green Cupcake Liners
What You Do:
1 – First, start by preparing cupcake batter according to box instructions
2 – Then, line a cupcake pan with green cupcake liners
3 – Fill each one halfway with batter, and bake according to box instructions
4 – Then once baked, let cool completely because you don’t want the next steps to melt
5 – Fill piping bag with white icing and add piping tip
6 – Starting in the middle of your cupcake, work your way out and up with the icing
7 – Next take your Golden OREO Cookies and paint each one with gold mist
8 – Place a toothpick through the center, once dried, and place towards the back of your cupcake
9 – Next place toothpicks through 4 marshmallows, and place them on top of the cupcake as shown
10 – Take your Extreme Airheads and cut into 1/3
11 – Place two sections together and curve in between the marshmallow, to create a rainbow, as shown
12 – Lastly, serve and enjoy!
