I mean, we’re not Irish.. Yet, I also love Easter and I’m not Christian. And my love for Valentine’s Day knows no bounds! I really love all holidays for different reasons. St. Patrick’s Day is a great and hopeful time of year – almost spring. We celebrate with corned beef and cabbage (which Cassidy makes himself and it’s quite amazing), and who doesn’t love Lucky Charms and a good Irish Cream latte? I know I do! I also love cupcakes, and these cupcakes are incredibly delicious.
St Patrick’s Day Lucky Charm Cupcakes:
What You Need:
Boxed vanilla cake mix + ingredients to make it**
2 sticks unsalted butter, softened
4 cups icing sugar, sifted
2-3 tbsp milk
Green gel food coloring
Blue gel food coloring
Yellow gel food coloring
Red gel food coloring
½ cup Lucky Charms cereal
**We recommend splitting the portions in half, as most cake mixes yield about 24 cupcakes. This way, you can make one dozen.
Yields: One dozen cupcakes
What You Do:
1 – First, prepare cupcakes according to box’s directions – allow the cupcakes to cool completely before decorating. And you can also use your favorite “from scratch” recipe.
2 – Add butter, icing sugar and milk to a large bowl. Use an electric mixer to beat together all ingredients, starting on low and gradually increasing to high.
3 – And then, beat ingredients until smooth, creating semi-stiff peaks.
4 – Divide buttercream into 4 separate bowls, and then add one color of gel food coloring to each bowl – to achieve a rich color, add about 2-3 small drops (a bit less than ¼ of a teaspoon).
5 – Then, mix each bowl of buttercream until completely tinted.
6 – Attach Wilton icing tip #21 to a piping bag, and then scoop colored buttercream into piping bag, alternating colors.
7 – Frost each cupcake.
8 – Decorate each cupcake with cereal, using mainly the marshmallow shapes. Lastly, enjoy!




And then, you serve them at your favorite St. Patrick’s Day event! Whether that’s a play date or party, or just spending the time with your family. Either way, these cupcakes are just the cutest, and they’re tasty too. We love to celebrate that day (or that week) or even that month with all sorts of fun festive treats and meals. Those are adorable! I’m not Irish, but I like to celebrate St. Patrick’s day, too. Before I was married, my sister and I would go to an Irish pub in the city for St. Patrick’s day.. For some reason, we would eat chili!
