And if you’re wondering, “How am I going to make Whoopie Pies today?” Just channel Scarlet. She often wakes up in the morning and decides to bake a cake or cookies or popovers or cupcakes. That’s just how we roll. Also, you still have three days to make these! We go big for St. Patrick’s Day. This year, Cassidy proactively got ready for it, with small gifts, fun ways to surprise the kids, and leprechaun trap supplies. That makes me happy because if left to my own devices, I treat every holiday like the most major day of the year. Don’t even get me started on Easter!

St. Patrick’s Day and Easter are at a magical time of year, and I embrace that.

St Patrick Whoopie Pies Recipe:

What You Need:

Ingredients needed for the cake:
Vanilla cake mix + all the ingredients to make it
1 tbsp cocoa powder
¼ tsp Kelly green gel food coloring

Ingredients for buttercream filling:
½ stick butter, softened
1 cup icing sugar
2-3 tbsp milk

Tools needed:
Rectangular pan (13 x 9)
Parchment paper
4 leaf clover cookie cutter

Yields: 6 to 8 whoopie pies

What You Do:

1 – First, line your baking sheet with parchment paper and preheat your oven according to the cake mix’s directions.

2 – Then, start mixing your cake mix and its ingredients. Once the cake batter has formed, add cocoa powder and mix until completely incorporated.

3 – Next, add gel food coloring and mix until tinted but you might have to start with a little.

4 – Using a spatula, spread your cake batter onto your lined baking sheet – and bake according to the box’s directions.

5 – To make the buttercream, beat together butter, sugar and milk on medium speed. Gradually increase the speed to high.

6 – Once the ingredients are combined and form semi-stiff peaks, scoop into a piping bag.

7 – Remove cake from oven and allow to cool. Using your cookie cutter, cut out 4-leaf clover shapes and save the scraps for snacking!

8 – Flip over each shaped cake (because they look better from the underside and are easier to frost this way).

9 – Frost half of your shaped cakes and then sandwich with another unfrosted piece.

10 – Lastly, serve and enjoy because that’s the best part!

Now, in New England, whoopie pies are so prevalent that you can even find them at gas stations. And I’m not talking about mass-produced ones. I mean, you can find ones that Grandma baked right at your local rest area! At least, I assume Grandma baked them because that’s just how I picture things. In truth, anyone can bake them – even you!
