Sprinkles Cupcakes (Surprise Inside)

Raise your hand if you love sprinkles in general. I do. And of course I just made one of those little microwave mug cakes and what made it TRULY delicious was whipped cream and sprinkles. So you basically need to add them to everything. These cupcakes somehow remind me of Super Mario Brothers, while also having nothing to do with that. They’re just delightful cupcakes, like the kind you’d see in a dream, or in a cartoon. And even, yes, a video game. Speaking of which, my kids both play Toca Boca (or Toca World, whatever it’s called) and like to punk each other by going into each other’s houses and leaving gross things. Tonight I think I’ll sneak into their little houses and do really mom things, like stock their fridges and put out doughnuts and coffee for their mornings. Are we a little nutty? Guilty as charged here. Although I wish I could leave these:

Sprinkles Cupcakes (Surprise Inside):

Funfetti cake mix, and all ingredients to prepare cupcakes
12 Tbsp sprinkles, scant
½ cup unsalted butter, softened (approximately one stick)
3 cups icing sugar
1 Tbsp milk
Blue gel food coloring
#12 Wilton round piping tip
#5 Wilton round piping tip

Yields: 12 decorated cupcakes

What You Do:

1 – First, prepare your funfetti cake mix into cupcakes according to the package’s directions – you will need one dozen cupcakes for this recipe.

2 – Then, once they are baked, allow to cool completely.

3 – Once cooled, use a paring knife to carve out the top portion of each cupcake: about 1 inch wide and ½ an inch deep; then discard the tops and set the hollowed-out cupcakes aside.

4 – In a large bowl, use an electric mixer and beat together softened butter, icing sugar and milk. Mix until buttercream forms: you will want it to be smooth while forming semi-stiff peaks.

5 – Take about ¼ cup worth of white buttercream and set aside. Add blue gel food coloring to the remaining buttercream (ie.: the larger portion). Mix until completely tinted.

6 – Then, add approximately 1 tbsp of sprinkles into the hollowed portion of each cupcake.

7 – Scoop blue buttercream into a piping bag with Wilton round tip #12 attached; then frost each cupcake generously.

8 – Scoop the white buttercream into a piping bag with #5 round tip attached. Frost each cupcake with cloud details.

9 – Lastly, serve and enjoy!
