Often I formulate a recipe idea, and then have Cassidy help me execute it. It’s sort of how we work best. I dream and visualize. He plans and executes. Sometimes he dreams and visualizes, and I plan and execute. Somehow, it all works out.
Day after day, night after night, we set food on the table. The kids get more adventurous by the day, and sometimes, they backtrack. That’s having kids. Scarlet doesn’t like the skin on apples, but she liked them last week. I’d be upset, but this week she’s eating chicken noodle soup, Italian Wedding soup, and artichokes. Did I mention that one yet? The kids are obsessed with artichokes. Other current favorites are tiny meatballs, carrots, and eating food out of bowls made out of food.
There are so many reasons I also love eating food out of bowls made out of food. (say that three times fast) It’s because it’s pretty magical! And more importantly than that, eating such festive foods reminds me of parties. Parties make me happy.
It reminds me of school dances and weddings. Even better, it reminds me of my brother and sister’s Bar and Bat Mitzvahs. True I had my own two years later, but I was way too revved up to eat or remember the food then. For my siblings, the catering company had an entire table devoted to bite-sized foods. Pizza bagels, pigs in a blanket, mini grilled cheese bites, and pretty much anything you would want to fill your stomach with. Ever since then, I seek out the original ideas when I’m being served snacks and appetizers. At our wedding, we had a Mashtini bar! Mashed potatoes in little martini glasses for all!
Pardon me for the wrong sports references but this recipe is, to put it mildly, a home run. You cannot lose with this! If you’re having a big game party, or going to a big game party, you have to bring these. My friend calls them the perfect snack. My husband calls them dinner. I call them the perfect party recipe. It needs to be mentioned that we essentially created them on a whim in the kitchen after a good friend gave me this perfect idea. I chopped while my husband scooped and sliced. He seasoned and I tasted. I tasted and he seasoned. We perfected the recipe in order to get it right for you.
Why did we choose the ingredients we chose? Easy. You see, TABASCO® Sauce ingredients are marinated in wood barrels for three years before the sauce is bottled, and the sauce is made from vine-ripened, red jalapeño peppers over a pecan wood fire. It’s the perfect addition to your Big Game food spread. Also, every bottle is made from hand-picked, ripened red tabasco peppers, vinegar and salt – giving it a taste like no other. TABASCO® Sauce is made with those 3 simple ingredients.
- 2-3 avocados
- 2 tablespoons TABASCO® Sauce
- 1/2 red pepper, chopped
- 1.5 pounds boneless, skinless chicken breasts
- 1 garlic clove, minced
- 1 cup fresh strawberries, chopped
- 1/4 cup pecans, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon paprika
- 1/2 cup sour cream
- 2-3 tablespoons Balsamic
- 1/2 cup Parmesan
- 1. Preheat grill or skillet to medium high heat and rub chicken with olive oil and seasonings
- 2. Grill on each side for 2-4 minutes until chicken is cooked through
- 3. Chop chicken and set aside
- 4. Scoop out avocado halves and leave about two inches of flesh inside
- 5. Slice the avocado you scooped out
- 6. In a large bowl, mix the chicken, avocado slices, red peppers, strawberries, pecans, salt, pepper, paprika, Balsamic and sour cream
- 7. Toss well to combine
- 8. Scoop the mixture onto the avocado halves
- 9. Top with TABASCO® Sauce and serve
- 10. Enjoy!
Doesn’t it look delicious? It is! It was so much better than I even imagined, and I imagined it as pretty great. I love that it takes simple ingredients and makes you feel GREAT. You can use mayo in place of sour cream, but I tend to skip mayo if I can. The combination of flavors is out of this world. I really encourage you to make this versatile dish for your Big Game party, or on any weeknight or weekend. I know I will make it many times over. Handheld snacks are my very favorite dish!
