You already know I love them because I talked about them in-depth in this post, and also made a yummy recipe! I’m back at it again with Sassy Southwestern English Muffin Bites, and they are so good! They’re perfect for this time of year because soon enough, you’ll be hosting and attending parties. And you know what? English muffins are so much more than breakfast food! I remember only enjoying them in the mornings. Luckily, we’re rewriting the rules. They’re great ANY time of day.

Sassy Southwestern English Muffin Bites:
What You Need:
6 BAYS English Muffins – split and toasted
1 package (8 ounces) of shredded Taco or Mexican seasoned cheese blend
4 green onions, thinly sliced
2/3 cup mayo
1/3 cup chunky salsa (I used mild)
1/3 cup olives, sliced
What You Do:
1 – Heat oven to 375
2 – In a bowl, combine the cheese, onions, mayo, salsa and olives and mix well
3 – Spread the mixture evenly over the 12 English muffin halves
4 – Bake for 12-14 minutes or until the muffins are golden brown and the cheese is bubbly
5 – Cut them into quarters, plate, and serve!

I was excited about English muffin bites. I love bite-sized food, therefore this seemed like the perfect recipe. They go fast! They may be small but they’re completely full of flavor. You can even add heat to them with medium or spicy salsa.
Bays still adheres to their authentic, original recipe after more than 80 years! Remember, you won’t find them in the bread aisle. Look in the refrigerated dairy case next to the eggs and milk. They are SO good and a new family favorite.
