Santa’s White Christmas soothes the soul and makes us feel good. Besides the holiday season, I’m always glad I have it at home in the winter. Do you have a slump time of day? I know for some it’s early, mid, or late morning. For others, it’s afternoon or evening. For me, it’s in that 3:00-5:00pm zone, especially during the winter when the sun sets so early behind the wall of trees on our property. And for a special treat, I’m sharing a recipe for “Snow Cookies”! My kids love these because sprinkles. And cookies. They’re so good! They’re a perfect delight to pair with Santa’s White Christmas. Snow Cookies and Santa’s White Christmas:
Ingredients:
2 3/4 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 tsp vanilla
12 oz. white chocolate chips
Blue snow flake sprinkles
Directions:
Preheat oven to 375 degrees. Line a cookie sheet with parchment paper. In a medium sized bowl, whisk together flour, baking soda, and baking powder, and then set aside. In a large bowl, cream together butter and sugar until fluffy. Add vanilla and egg, and mix. Slowly add dry ingredients a little at a time, mixing well between each addition. Drop rounded teaspoonfuls of dough onto cookie sheet, about 2 inches apart. Bake 9-10 minutes until cookies start to turn golden. Then, melt white chocolate chips in a medium sized bowl on 30 second intervals. Once cookies have cooled, dip half of the cookie into the chocolate, and top with snowflake sprinkles for a fun winter treat.
