Well, I will. You need directions and such! I am so happy that creamsicles are.. a thing. As you know, I mostly struggle with things like JELLO and popsicles because they seem rather unfulfilling to me. I like to be filled up! That said, a local popsicle business has been inspiring me, and that’s why I have been making and sharing popsicles, like my fruity, coconut water ones the other day! These are creamier with coconut MILK instead of coconut water, plus heavy cream for one layer too. In other words, creamy bliss. And of course you can make these year round, but they’re festive. With an upcoming holiday, we want to do something special at home.
Red White and Blue Creamsicles:
What You Need:
1 cup blueberries
1 cup strawberries
1/4 cup coconut flakes
2 cups coconut milk
1 cup heavy whipping cream 1 tsp vanilla extract
Prep time: 5 min
Ready in: 4 1/2 hours
What You Do:
1 – First, wash and prepare fruit, and then dice strawberries.
2 – Add strawberries to the bottom of each popsicle mold.
3 – Then pour coconut milk until about 1/3 full.
4 – Place in freezer for 1 1/2 hours; and then half way through, cover with foil and poke popsicle sticks into each mold.
5 – Remove from freezer, add coconut flakes to each.
6 – In a small bowl, mix heavy whipping cream and vanilla extract, and then pour into mold until about 2/3 full.
7 – Place in freezer for an additional 1 1/2 hours.
8 – Remove from freezer, add blueberries and coconut milk until full.
9 – Place in freezer for 1 1/2 hours.
10 – Lastly, enjoy!
