Red & Green Holiday Salad With Litehouse.

I remember the first time I looked at salads as a holiday food.

It was mid-December and my life was full of photo shoots and office parties, from when I worked as a school photographer. I was nursing a pretty sore jaw after dental work, and I decided to go home for some comfort, and some comfort food. My chef brother was home, whipping up a holiday salad for us all. I had never had fruit in my salad! This was life-changing. Even with my extreme tooth pain, which was honestly worse than birth contractions for me, I bit into a soft, poached pear. I was in flavor heaven. I never looked at salads the same way. Now I love them as a festive part of a holiday meal or party.

When I received three amazing Litehouse Foods products – Balsamic Vinaigrette Dressing, Gorgonzola Cheese Crumbles and dried herbs, I knew I wanted to make a special Red & Green Holiday salad, using fruits, vegetables, cheese, herbs & dressing:

Ingredients

  • 1/2 cup chopped pecans
  • 6 cups mixed greens
  • 2 cups fresh, sliced strawberries
  • 8 ounces Litehouse Gorgonzola Crumbles
  • 2 cups fresh, sliced grapes
  • 1 teaspoon of Litehouse dried herbs
  • Litehouse Balsamic Vinaigrette Dressing to taste

Instructions

  1. Heat the pecans in a skillet over medium heat, tossing frequently, until lightly browned
  2. In a bowl, mix together the salad dressing and dried herbs
  3. In a large bowl, mix together the toasted pecans, mixed greens, strawberries, grapes and gorgonzola crumbles.
  4. Toss salad with the salad dressing/herbs mixture and enjoy!

In my house we do flank steak, homemade french fries and a fresh salad every Christmas night. And this is well after a full brunch and presents. It’s nice to have this holiday tradition and the salad pairs wonderfully with other holiday dishes.
