Raspberry White Chocolate Scones Recipe

I never knew I was a scones person, until Raspberry White Chocolate Scones.

Well to be fair, I think a chocolate chip scone once sold me on the awesomeness of scones.

That said, this would is great year-round but especially perfect for these ice cold days of January into February. What does your Valentine want? That’s right. Raspberry White Chocolate Scones. What does your Secret Santa want? You guessed it. What do you serve for your gorgeous summer brunch? Yup. Scones. These scones. I used to think of scones as being rather meh, dry, crumbly, processed, etc. These scones would change anyone’s mind. They’re dense, but not too dense, moist, and sweet but not too sweet. My favorite way to eat them is with sweet whipped butter, but my kids like salted butter, raspberry or strawberry jelly, or Nutella with their scones.

No matter what you choose, it will be delicious.

Raspberry White Chocolate Scones:

What You Need:

½ cup (1 stick) cold butter
2 ½ cups all-purpose flour
½ cup sugar
½ teaspoon salt
2 teaspoons baking powder
2 eggs
1 teaspoon vanilla extract
2/3 cup heavy whipping cream, plus 1-2 tablespoons additional for brushing on the scones
1 cup fresh raspberries
½ cup white chocolate chips
1-2 tablespoons turbinado sugar

Prep time: 25 minutes
Refrigeration time: 30 minutes
Bake time: 20 minutes

What You Do:

1 – Grate the cold butter with a cheese grater using the coarse side of the grater for larger shreds of butter, and then place it in the freezer to chill

2 – In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder

3 – Add the chilled, grated butter to the flour mixture and lightly blend into the flour with a fork (don’t over mix – you want many lumps of butter and you do not want the butter fully incorporated into the flour mixture)

4 – In a small mixing bowl, whisk together the eggs, vanilla extract, and 2/3 cup of heavy cream.

5 – Then, add the wet mixture to the flour and butter mixture; stir just until combined, but do not over mix

6 – Add the fresh raspberries and white chocolate chips and fold into the dough with a spatula (many of the berries will break down as you fold, but do not over mix until all of the berries break down)

7 – Turn the dough out onto a sheet of plastic wrap and form into a disk – place in the freezer to chill for 30 minutes

8 – Then, preheat the oven to 425F

9 – After the dough has chilled, remove it from the freezer and place on a large baking sheet lined with parchment paper

10 – Gently press the dough into a circle, 1-inch in thickness

11 – Use a sharp knife to cut the dough circle into 8 wedges

12 – Using a narrow spatula, move the dough triangles slightly out from the circle to give at least ½ inch of space between each scone (This can be tricky because the dough is very soft. After moving the dough triangles, simply reshape the scones with your fingers if needed)

13 – Brush the top of each scone with heavy cream using a pastry brush, and then sprinkle each scone with turbinado sugar

14 – Bake the scones at 425F for 18-20 minutes until golden brown

15 – Serve the scones warm with sweetened whipped cream, butter, or raspberry jam and clotted cream

Notes:

If the butter is worked into the dough too much, the result will be a too wet, difficult to manage batter.

  1. These look amazing! I’m trying to cut back on the baked goods after Christmas and New year. But I’ll have to try these. My daughter is coming for a visit and these would be delicious on a rainy afternoon with tea. 🙂
