Today dawned dark and rainy, and oh, what I wouldn’t give for an ordinary rainy day. I don’t like rain but I’m sure I’ll look at rainy days with new appreciation in the future. I’ll think about how we could see a movie or have friends over, or that I could meet a friend in a coffee shop. I miss that. It’s only been a week, but it’s the unknown that is hard right now – not knowing when things could feel more normal – or whatever the new normal will be. I work at home, although usually alone at home, but I’m no stranger to rainy weekends. We’ve been keeping optimistic in our self-quarantine here, and trying to have extra fun. There have been later bedtimes, lots of LEGO Masters, and tons of pancakes. These Rainy Day Pancakes are a great recipe to try today!
Rainy Day Pancakes
What You Need:
Makes 20-30 small pancakes
4 eggs, room temperature
1/8 cup sugar
2 1⁄4 cups whole milk
3 3⁄4 cups cake flour, sifted
3⁄4 cups heavy cream
3⁄4 tsp salt
1 tsp vanilla
4 ounces unsalted butter, melted
Additional butter or oil of choice for frying pancakes
For whipping cream:
3⁄4 cup heavy cream + 1 tsp sugar (see instructions below)
*Optional: confectioners sugar
Small circular cookie cutter less than 2” wide
Icing decorator tool or piping bag
What You Do:
1 – First, place eggs and sugar in mixing bowl and beat until blended well.
2 – Warm milk to room temp and blend half of it into the egg and sugar mixture.
3 – Then, gradually whip in cake flour.
4 – And then mix in heavy cream.
5 – On low speed, gradually add remaining ingredients (milk, salt, vanilla, and melted butter).
6 – Then, let batter rest while preparing toppings and homemade whipping cream.
7 – And then fry pancakes in well greased skillet.
Homemade Whipping Cream Instructions:
8 – Beat 3⁄4 cup heavy cream and 1 tsp sugar until light fluffy peaks form.
9 – And then scoop whipping cream into decorator tool or piping bag.
Umbrella Pancakes Assembly:
10 – Cut out half circles with cookie cutter on one end of each pancake, and then line up blueberries in the shape of an umbrella handle.
11 – Using decorator tool or piping bag create little raindrops of whipping cream on the umbrella shaped pancake.
12 – Add sprinkles to the whipping cream rain drops, and enjoy!
And then pair it with some bacon, or other fresh fruit, or cheese, or whatever! Breakfast is a big deal in my house right now with all of us home. I’m not partaking as much as usual because I’m pregnant (more on that soon) and still in the first trimester, so even though I’ve been feeling well, I’m not myself quite yet. I’ve been craving pancakes like crazy, though! Usually I am a savory breakfast person and I usually love coffee, but not feeling the love for those things now.
