Rainbow is my lifelong aesthetic, ever since I was a little kid and sharing a rainbow bedroom with my big sister. My parents still have the rainbow afghan blankets that my grandmother had knit us. They are truly works of art. My favorite color is rainbow (and red if I have to narrow it down), and my entire life is about finding rainbows. Real rainbows, clothing rainbows, good food rainbows, whatever. I can remember having this obsession when I was only three, and it lives on, and gets more vivid. There was a double rainbow over my grandmother’s funeral, which was weird because it was a dry winter’s day. I was telling a co-worker that story, years later, and went outside to see a double rainbow. That’s the kind of story you just can’t make up, and it gives you pause and lets you believe. I think about it lately, when I need to think about it. Like right now.
Rainbow Yogurt Breakfast Parfait Recipe:
What You Need:
1 cup + 5 tbsp vanilla yogurt
Purple gel food coloring
Blue gel food coloring
Green gel food coloring
Yellow gel food coloring
Orange gel food coloring
3 Tbsp granola
5-7 raspberries, washed and dried
Yields: 1 large serving
What You Do:
1 – Begin by dividing yogurt into 5 separate bowls – you will want 5 Tbsp of yogurt in each each bowl.
2 – Add one color of gel food coloring to each bowl – only a small dot of food coloring should be enough to tint the yogurt.
3 – Then, mix each bowl so that each serving is completely tinted.
4 – Layer the yogurt in a tall glass (or a standard size mason jar) in this order (from bottom to top): purple, blue, green, yellow, orange.
5 – Next, add the granola layer, followed by raspberries. Serve and enjoy!
