I hope you’re all doing well this week. On this.. Wednesday? Is it Wednesday? I haven’t the foggiest idea anymore. It’s a week in “The Weirds,” as my friend Tara calls it, and it’s a week of a LOT of work and kid stuff. Like picking up their stuff from their teachers – wearing masks – and isn’t that the saddest thing ever? Scarlet has middle school orientation stuff tomorrow and on Monday, as well as her Star Wars class. Des has Zoom classes five days a week, except for today. And like I said I have a lot of work this week. Four drafts due in one day! And Finish the Sentence Friday on the same day! So I’ve been mostly missing the news of the world. Maybe for the best.
Rainbow Unicorn Pinwheel Cookies:
What You Need:
1 stick butter, softened
1 large egg
2 tsp vanilla extract
1 cup granulated sugar
3 cups a/p flour
1 tsp baking powder
1 tbsp milk
Red gel food coloring
Yellow gel food coloring
Blue gel food coloring
Purple gel food coloring
Yields: 12 to 15 cookies
What You Do:
1 – First, in a large bowl, cream together butter, sugar, egg, milk and vanilla.
2 – And then in another bowl, sift together flour, baking powder and salt.
3 – Slowly add dry ingredients into wet ingredients – then mix until cookie dough forms.
4 – Then divide cookie dough in 4 equal parts.
5 – Tint each cookie dough part with a respective gel food color and knead. In the end you should have one red ball of cookie dough, one yellow, blue and purple.
6 – Wrap each colored cookie dough in plastic and chill for at least 30 minutes.
7 – Remove cookie dough from fridge and line a baking sheet with parchment paper, and then set aside.
8 – And then preheat oven to 375 degrees F.
9 – Start by rolling out the red cookie dough until it’s about ¼ of an inch thick, and then set aside.
10 – Roll the yellow dough until it’s ¼ of an inch thick and the same size as the red dough and then set on top of the red dough.
Repeat for the blue dough, followed by the purple dough.
11 – Then, roll the layered cookie dough into a cylinder.
12 – Cut slices from the cookie dough cylinder, about ½ an inch thick.
13 – And then place each cookie on the lined baking sheet. Bake for 7-10 minutes.
14 – Then, allow to cool for 5-10 minutes. Lastly, serve and enjoy!
