There’s nothing I don’t love about rainbow sprinkles, or rainbows in general. And rainbow sprinkles cupcakes are probably the best chance of me loving cupcakes. Scarlet says I have no soul, but I don’t love cupcakes, cake, or waffles. I do, however, love pancakes, cookies, and ice cream. I love rainbow sprinkles most of all, and that’s what makes this recipe one of my favorites.
Rainbow Sprinkles Cupcakes for Any Occasion:
What You Need:
One dozen of your favorite boxed or homemade vanilla cupcakes, completely cool to the touch – we used a “from scratch” recipe because Scarlet won’t do it any other way
2 cups confectioners’ sugar
2 drops blue gel food coloring
1-2 tbsp of each of the following sprinkles: red, yellow, green, blue, purple
2-3 tbsp milk
Yields: 12 decorated cupcakes
What You Do:
1 – First, start by making the buttercream. In a large bowl, beat together butter, confectioners’ sugar and milk with an electric mixer. Start on low and gradually increase the speed to high.
2 – Then, once the ingredients are well-combined and form semi-stiff peaks, the buttercream is ready.
3 – Scoop half of your buttercream into a piping bag with a round icing tip attached, and set aside.
4 – Color the rest of the buttercream with blue gel food coloring.
5 – Frost each cupcake with blue buttercream using an offset spatula.
6 – Now it’s time to make the rainbow: add sprinkles starting at the top of your cupcake and in an arch shape, spread the red sprinkles then follow with yellow, then green, blue and purple.
7 – Then, with white buttercream, frost out clouds at the end of the rainbow. Lastly, serve and enjoy!
