Rainbow Shortbread Cookies Recipe

I don’t know what the question is, but the answer is Rainbow Shortbread Cookies.

These Rainbow Shortbread Cookies will put a smile on your face year-round. Enjoy them with their happy clouds too.

These adorable Rainbow Shortbread Cookies are a bit of a process, but it’s sort of a soothing process. Like if you like playing with your food, or playing with Play-Doh, but not eating Play-Doh. Although I did it once, and it was salty.

Anyway, these are sweet!


Rainbow Shortbread Cookies:

Servings: A Whopping 36 Cookies

Prep: 1 Hour 30 minutes| Cook Time: 10 minutes | Total Time: 1 Hour 40 minutes

Ingredients:

⅔ cup butter, shredded
1 ½ cup flour
¾ cup powdered sugar
1 tsp baking powder
¼ tsp salt
⅔ cup butter, shredded
1 tsp vanilla
Food Coloring: Red, Orange, Yellow, Green, Blue, Purple (or whatever you want)
Optional: Frosting

Directions:

1. Preheat oven to 350 degrees, and then line a baking sheet with parchment paper.
2. In a large mixing bowl, mix together flour, sugar, baking powder, and salt.
3. Then, cut in butter and vanilla – this will take about 5-8 minutes of hand kneading to get your butter well combined.
4. Then once dough has formed, separate into 6 balls.
5. Color each ball with food coloring to make each one a color of the rainbow.
6. Roll each dough color flat (except purple) onto parchment paper and set in the fridge for 30 min.
7. Roll purple into a long log for the middle of your circle rainbow.
8. Once the dough is cooled, take one color out at a time.
9. Starting with purple and blue, roll the blue color around the purple, splitting the log in half if needed.
10. Repeat with each color of the rainbow in the order of, green, yellow, orange, and finally red.
11. If the dough gets too soft, you can set it in the refrigerator for 10 minutes at a time.
12. Once dough is all rolled, cut into ¼ in circles and place on the prepared baking sheet.
13. Bake for 10 minutes.
14. OPTIONAL: Add vanilla frosting of choice to a piping bag or baggie and pipe little swirls at the bottom of your circular cookie to make it look like clouds.
