Even a random gloomy Tuesday that is actually sunny and nice but feels gloomy. I think it’s just hard to have four kids at four very interesting ages: almost 13, almost 10, one and a half, and six-weeks-old. Those are all milestone(ish) ages, and I’m dealing with a lot of feels. Each day feels so loooooong, but I know the years can fly by with a gasp. Rainbow Rice Krispie Treat Recipe:

What You Need:

4 Tbsp butter + extra for coating the pan
8 cups Rice Krispies / rice cereal
2 standard packages (about 80 marshmallows) of large marshmallows
Red gel food coloring
Yellow gel food coloring
Green gel food coloring
Blue gel food coloring
Rainbow sprinkles (optional)

What You Do:

1 – Begin by coating a 9×9 square pan with butter, and then set aside.

2 – Add 4 Tbsp butter into a large saucepan and melt over medium heat.

3 – Add marshmallows and stir until melted. Do not overcook. Once marshmallow is melted remove from heat.

4 – Then, divide melted marshmallow evenly into 4 separate bowls.

5 – Add one ¼ tsp of one gel food coloring to each bowl of melted marshmallow. You should have a bowl of red/pink, yellow, green, and blue marshmallow.

6 – Add 2 cups of rice cereal into each melted marshmallow mixture; then mix until fully combined.

7 – Start with blue layer. Pour the blue Rice Krispies mixture into the coated pan and press down evenly.

8 – Next, work with a green layer, followed by yellow, orange, and finally, red.

9 – Press rainbow sprinkles on the top portion of the Rice Krispies treats.

10 – Allow to set for about 2 hours. Serve and enjoy!
