Rainbow Ice Pops Recipe

Rainbow Ice Pops on rotation around here!

Rainbow Ice Pops are a perfect warm weather treat - and these are also pudding pops. so they have that extra creamy factor as well.

Ice pops, get your ice pops! Rainbows, get your rainbows! I’ve been sharing lots of ice cold rainbow recipes this month, like Rainbow Yogurt Pops and Coconut Water Pops, so I’m just keeping it real here. This recipe uses pudding mix. So many wondrous things to behold, AND, they’re pretty to look at too. I used to be a bit more choosy with my frozen treats, but lately I’ve been open to all sorts of ideas. Fruits. Dairy. Pudding. Whatever. Maybe all of the above? None of the above? We’re expecting a hot one this weekend and it will be fun to make these for the kids. To be honest, it will be fun to make these for me. I love all things rainbow and frozen treat-like!

Rainbow Ice Pops Recipe:

Makes 8 popsicles

What You Need:

1 3.4 oz box of instant vanilla pudding
2 2/3 cup milk
Food coloring

What You Do:

1 – In a medium size bowl add the pudding and the milk, and then whisk until smooth.

2 – Then, using smaller bowls, divide the pudding mixture equally into the 5 bowls.

3 – Add food coloring to each bowl making red, orange, yellow, green, and blue. I added about 6 drops of food coloring into each bowl. To make orange, add 5 drops of yellow and one drop of red.

4 – Line dixie cups on a tray and layer the pudding mixture into the cups with a small spoon.

5 – Poke the popsicle sticks into the dixie cups once all layers are complete and cover each cup with a small square of tin foil.

6 – Place into the freezer and freeze for at least 6 hours or overnight if possible.

7 – Remove popsicles from the freezer and peel off the paper dixie cup. And make sure to enjoy!
