For St. Patrick’s Day 2020, I felt a little ill-prepared. Usually I get Lucky Charms ahead of time, which I had, but not the chocolate coins! It’s all about the chocolate coins! We usually leave them in all sorts of weird and magical places in our house the night before the holiday. The kids get up in amazement and excitement. With the lockdown beginning on March 13th, and with me being pretty early and somewhat queasily pregnant, I was not ready for the holiday plans on March 16th. I reached out to our local Buy Nothing Facebook group about the chance of anyone having chocolate coins, and someone did! She left it on her doorknob for me to pick up late that night when the kids were in bed. That was my first drive through Main Street during lockdown.
St. Patrick’s Day Rainbow Fruit Platter:
What You Need:
Note: The quantity needed will depend on the size of the plate or platter.
Strawberries
Cantaloupe
Pineapple
Green grapes
Blueberries
Black grapes
Marshmallows
Wrapped Rolos candies
What You Do:
1 – Wash and dry the fruit, and then cut into bite-size pieces if desired.
2 – Arrange the fruit beginning with the strawberries along the edge of the plate.
3 – Continue adding the fruit, row by row, in the order listed. If the fruit slides towards the center, gently push the fruit back towards the edge of the plate and continue adding rows until the rainbow is complete.
4 – Add a small bowl on each side of the rainbow with one holding marshmallows and the other holding the Rolos candies. If prefered, place the marshmallows and candies directly onto the plate.
5 – Serve with bamboo skewers if desired to allow guests to create their own rainbow kebab.
