Hey, everyone. I hope you’re staying safe and healthy and SANE. It’s hard times for sure. And there are easy and beautiful things about this time too. It’s super conflicting, and normal to feel any number of things every day. Every hour. I am pretty silent today on social media – I’m mostly reading and donating money where I see fit. That said, I’d really like to continue my week of mostly rainbow recipes to show support for PRIDE month. This Rainbow Candy Popcorn is really fun! We do it without gumballs because no one in my family likes them, but if you choose to use them, they make a nice finisher for this snack! As in, eat candy and popcorn and then have gum.
Rainbow Candy Popcorn Recipe:
What You Need:
1 – 10 cups popped popcorn, divided
2- 1 cup blue candy melts
3 – 1 cup red candy melts
4 – 1 cup yellow candy melts
5 – 1 cup green candy melts
6 – 4 tsp coconut oil, divided
7 – 4 medium-sized freezer bags
8 – M&Ms, for topping
9 – White gumballs, for topping (optional)
10 – Sprinkles, if desired
Yields: 2-3 servings
What You Do:
1 – First, line a baking tray with wax paper and set aside.
2 – Place each color of candy melts in their own microwave safe bowls, and then add 1 tsp of coconut oil in each one.
3 – And then fill up each of your freezer bags with 2 ½ cups of popcorn.
4 – Then, microwave each bowl of candy in 30-second intervals, stirring between each interval, until completely melted.
5 – Pour one bowl of melted candy into one bag. Seal and shake and spread on lined baking sheet. Then, repeat for every color.
6 – Allow to set, about 25 minutes and mix together, and then serve in individual bowls.
7 – Lastly, top with M&Ms, sprinkles, and gumballs (optional).
