This isn’t just any ordinary breakfast dish, oh no. We’re talking about Pumpkin Waffles.
You see, I remember the first time I tasted these beauties. It was a cool Sunday morning, the leaves outside painted in hues of orange and red. There I was, in my cozy kitchen, whipping up some magic. The final product? Golden, crispy waffles with a twist of pumpkin goodness. It was love at first bite!
Pumpkin Waffles (that are glorious):
Prep Time: 25 min.
Cook Time: 10 Minutes
Servings: 5 Waffles
What You Need:
2 cups all-purpose flour
½ Tbsp baking powder
½ cup brown sugar
½ cup pumpkin pure3 ( any brand )
1 ½ cup milk (we used oatmilk)
1 Tbsp olive oil (and a bit more for waffle maker)
2 eggs
1 stick melted butter
½ tsp cinnamon
½ tsp nutmeg

What You Do:
1 – In a medium sized bowl, whisk together dry ingredients: flour, baking powder, sugar, cinnamon, and nutmeg

2 – Then, in a separate bowl, whisk together eggs, milk, olive oil and pumpkin puree using an electric mixer

3 – Beat for about 1 minute or until smooth, and then add melted butter slowly

4 – Add dry ingredients to the mixture; continue whisking but do not overdo it (it’s ok if the texture is a bit lumpy)

5 – Preheat waffle maker and brush the surface with a little bit of olive oil; then pour about ½ cup batter per waffle

6 – Cook the waffle until crispy (usually until steam doesn’t come out anymore) for about 5-6 minutes, or depending on waffle maker

7 – Serve with desired toppings! We like maple syrup, whipped cream, nuts, cinnamon, jam, and fruit
