During my terrible growth spurts in high school, I could polish off two Swiss Cake Rolls and a bowl of popcorn. And then have dinner and dessert. There’s just something about a cake swirl. Speaking of which, today was a busy baking, cooking, and preparing day. And I’m so sorry I didn’t get to my blog until after 9pm on a Monday. It was that kind of day. I had morning plans and then came back to work work work. Although when work looks like this, it’s really ok, I think:
Pumpkin Roll Recipe:
What You Need:
3⁄4 cup cake flour
1 tsp nutmeg
2/3 cup pumpkin puree
1⁄2 cup white sugar
1 Tbsp cinnamon
3 eggs
1⁄2 cup brown sugar
1 tsp ginger
Filling Ingredients:
3 Tbsp butter, softened
8 oz cream cheese, softened
1 cup confectioners sugar
Additional Items:
Hand mixer
Parchment paper
Cooking spray
Makes: 1 loaf, 8-10 servings
Prep time: 10 minutes
Bake time: 15 minutes
What You Do:
1 – First, in a medium sized bowl, mix together pumpkin, brown and white sugars, cake flour, and spices
2 – Then, separate eggs and add egg yolks to cake mixture
3 – Beat egg whites on medium high for 2-4 minutes, or until stiff peaks form
4 – Gently fold egg whites into cake mixture, and be sure to not over mix
5 – Line a jelly roll pan with parchment paper, up over the edges as well, and cover with cooking spray
6 – And then, bake at 375° for 15 minutes
7 – While cake is in the oven, beat together cream cheese, butter, and confectioners sugar until creamy and smooth, and set aside
8 – Then, remove cake from oven. Lift or slide parchment lined cake onto a cooling rack. Allow to cool slightly. Roll cake inside parchment paper and set aside to cool completely
9 – Unroll cooled cake and spread cream cheese filling, completely covering cake
10 – Finally, re-roll cake without the parchment paper, and then sprinkle with confectioners sugar and store in fridge until ready to slice and serve
*For best results, allow cake to set in fridge overnight.

And for the record, I’ve been making changes in my life lately to allow more time for fun, kid time, and friend time. So if that means I’m writing this at 9pm, I’d say it’s time well spent.
