Pineapple Salsa: Summer’s End Win

Yeah, you’re going to want to write this one down.

I really should have introduced this recipe sooner, because there are no doubt more than 100 summer occasions to make it for, BUT, there’s still time. For one, there’s Labor Day weekend. For two, there’s still almost a month of summer. And for three, if you live somewhere warm year-round, you’ll always be making pineapple salsa. Not to mention for winter travel.

And, I’m going to teach you how to make pineapple salsa to serve right in a pineapple. Magic!

When you see the ingredients you’re going to say, “..but, Tamara. You hate onions and cilantro and spicy peppers!” And I’ll heartily agree with you, but first of all, the recipe is still good if you skip all that – a more mild pineapple salsa recipe. And second of all, I’m here to cater to my readers too. You want onions, cilantro and spicy peppers sometimes. Be my guest.

The pineapple salsa recipe in my heart might skip all that, but oh my gosh, LOOK AT THIS:

Pineapple Salsa For Chips

Pineapple Salsa

What You Need:

1 Whole Pineapple
1 Small Purple Onion
1-2 Limes
3-4 Roma Tomatoes
1 Small Orange Pepper
1 Jalapeno
Fresh Cilantro
1 tsp. Salt
½ tsp. Cumin

Ingredients for Pineapple Salsa

What You Do:

1 – Cut the pineapple down the center lengthwise so the stem is also cut down the center – do this carefully so the stems stay attached to each half

2 – Cut a grid pattern of squares into each pineapple half, making sure not to cut through the rind – I left about an inch of pineapple around the edge of the rind

3 – Dig out the pineapple chunks and chop them into very small chunks, and then put them into a large bowl

4 – Chop the tomatoes, onion, and peppers into small pieces, and put those in the bowl with the pineapple

5 – Chop a small bunch of cilantro and put that in the bowl along with the salt and the cumin (OPTIONAL)

6 – Gently mix everything together and squeeze the juice of one or both the limes over the salsa and mix again

7 – Add salsa to the hollowed-out pineapple halves, and then serve with tortilla chips
