Well, it feels like it anyway. We were talking this week about how we have experienced all four seasons within one week! Last Sunday, we had snow. Then we had a few nice spring days, and then a hot summer day, and then yesterday was like a fall day. Today we’re back to spring and I have the sandals, sundress, jean jacket, and messy braid and/or hat. That’s pretty much my signature. I’m not sure what we’re doing this weekend. We had planned to travel but now might stay here and relax or do day trips. Any ideas? Anything exciting in or around New England?
Ok, these are secretly cupcakes and are not ice cream at all, but they’re modeled after ice cream – making them imitate one of my favorite things. Who could resist Patriotic Ice Cream Cone Cupcakes? I couldn’t! In fact, I won’t. And you don’t have to either. So you should make these!
Patriotic Ice Cream Cone Cupcakes
What You Need:
Red Ice Cream Cones (Joy Brand)
White Cake Mix
Sour Cherry Candies
Blue Food Coloring
What You Need:
1 – First, preheat oven to 350 degrees
2 – Make cake mix according to package directions or you can make them from scratch
3 – Then, fill each cupcake cone ¾ way full
4 – Place on a cookie sheet and put in the oven for 15-17 minutes or until a toothpick comes out clean – I totally love how you can bake them right in the cones
5 – Then, let cool because you don’t want the frosting to melt
6 – Divide the frosting in half and color one half blue and leave the other white
7 – Pipe on the white frosting first and then the blue
8 – Lastly, sprinkle with the patriotic sprinkles and then add a cherry on top!
*1 cake mix makes about 18-20 cones.

Boy, as you can see, I have a bunch! And they’re all awesome. If you’re feeling particularly bold, you can totally have a party making all of those. If you do, though, make sure you invite me. And maybe 200 of my closest friends. I honestly can’t get enough of these recipes! I used to despise Memorial Day weekend, but only because I was once in the middle of an intense love story and work days were my only time to talk to him! I’m so glad those days are over. So, so glad.
