Well, almost. The kids are still in school as of the time of writing this, and then will be on summer vacation after what feels like the longest school year ever. I feel like they’ve grown SO MUCH in the last several months. This was the first school year with in-person schooling for an entire school year, since they were in fifth and second grades. I’m glad these aren’t graduation years for either kid, because I just can’t with that right now. I’m still too postpartum and too COVID-shocked. This is our third “weird summer” but we’ll be doing things we haven’t done in awhile. We’ll be going on a road trip with a vacation rental, and we’ll be flying in a plane to a wedding. And there will be another wedding too! Plus camp and lazy days and adventure days.
Ok, these are secretly cupcakes and are not ice cream at all, but they’re modeled after ice cream – making them imitate one of my favorite things. Who could resist these Ice Cream Cone Cupcakes? I couldn’t! In fact, I won’t. And you don’t have to either. So you should make these!
Summer Ice Cream Cone Cupcakes
What You Need:
Red Ice Cream Cones (Joy Brand)
White Cake Mix
White Frosting
Patriotic Sprinkles
Sour Cherry Candies
Blue Food Coloring
What You Need:
1 – First, preheat oven to 350 degrees
2 – Make cake mix according to package directions or you can make them from scratch
3 – Then, fill each cupcake cone ¾ way full
4 – Place on a cookie sheet and put in the oven for 15-17 minutes or until a toothpick comes out clean – I totally love how you can bake them right in the cones
5 – Then, let cool because you don’t want the frosting to melt
6 – Divide the frosting in half and color one half blue and leave the other white
7 – Pipe on the white frosting first and then the blue
8 – Lastly, sprinkle with the patriotic sprinkles and then add a cherry on top!
*1 cake mix makes about 18-20 cones.

Boy, as you can see, I have a bunch! And they’re all awesome. If you’re feeling particularly bold, you can totally have a party making all of those. If you do, though, make sure you invite me. And maybe 200 of my closest friends. I honestly can’t get enough of these recipes! I used to despise Memorial Day weekend, but only because I was once in the middle of an intense love story and work days were my only time to talk to him! I’m so glad those days are over. So, so glad.
