Making pancakes from scratch is an easy and satisfying way to start your day or feed the family. Pancakes From Scratch for Unicorn Lovers:
What You Need:
1 cup flour
1 Tbsp baking powder
2 tbsp granulated sugar
1 large egg
1 cup whole milk
2 Tbsp oil
Pinch of salt
2 drops violet gel food coloring
1 stick butter, softened
2 drops red gel food coloring
Whipped cream
1/2 cup of condensed milk
Rainbow Sprinkles
Yields: Approx. 8-10 small pancakes
What You Do:
1 – First, sift your flour, baking powder and salt, and then add sugar, and whisk.
2 – Then, add egg, milk, and oil and whisk until batter forms and is smooth.
3 – Then you’ll divide the batter in 2 bowls and color each one with its respective gel food colorings – make sure to mix until each bowl of batter is completely tinted.
4 – On a hot skillet (over medium heat) sprayed with cooking oil and/or coated with butter, pour ¼ cup of the batter and cook until bubbles form on top; then flip and cook until edges lift/turn a very light brown.
5 – Lastly, stack pancakes on a plate and pour over your condensed milk. Top with whipped cream and sprinkles and enjoy the sweet unicorn magic!
The kids have been staying up late over the weekends to watch special movies. Also, they’re older now and I remember going to bed late at their ages. We’ve certainly said “yes” to ice cream more than we usually do. Meal making is special these days too, now that our older kids are old enough to help in the kitchen. I have never liked waffles, but I LOVE pancakes a lot. And these are such special ones! Look at those pretty colors. As you know, I love everything rainbow, because I somehow believe that color makes food taste better. And if you believe it, that makes it real, right? Right.
