I know. It’s brilliant. I don’t even know how someone has the brainpower to invent this, but I know someone did. When I was a kid, I had a brief obsession with Cookie Crisp cereal and this reminds me of that. Basically, Kitchen Genius happened. Someone realized that they could fry up small circles of pancake batter on a frying pan, turn them over, and put them in a bowl with milk. Then I realized, “Hey, maybe we can do that with sprinkles too, huh?” And that’s because I love sprinkles. It’s Scarlet’s birthday next week, followed not long after by mine. The summer is weird, the year is weird, but hey, we have Pancakes Cereal. Things can’t all be that bad, right?
Pancakes Cereal with Sprinkles Recipe:
What You Need:
½ cup flour
1 tbsp sugar
1 ½ tsp baking powder
¼ tsp salt
½ cup whole milk
1 tbsp oil
¼ cup sprinkles + extra for garnishing
Syrup for serving
Yields: 4 servings
What You Do:
1 – Begin by adding all dry ingredients into a medium-sized mixing bowl: flour, sugar, baking powder and salt, and then mix to combine.
2 – Then, add egg, milk and oil.
3 – Mix all ingredients until a smooth batter forms.
4 – Add ¼ cup sprinkles and fold carefully into the batter.
5 – Heat a skillet over medium heat. Use a ¼ teaspoon measuring spoon to drop small portions of the pancake batter onto the heated skillet, about 1 inch in diameter (you may have to adjust the heat and lower as you continue cooking – you don’t want the pancakes to burn!).
6 – And then cook mini pancakes on each side for about 1-1 ½ minutes.
*For one serving, add approx. 20-25 pancakes in a bowl and garnish with syrup and additional sprinkles. Enjoy! You can also skip the syrup and add a nice big helping of milk.
