No Kid Hungry: Avocado and Sausage Kid-Friendly Eggs Benedict

I honestly can’t believe another back to school season is upon us!

Des, aged 6, said it perfectly: “This was the shortest summer of my life, and I’ve been around a long time.” Indeed. Summer may have been a whirlwind, but back to school season can be too! That’s why it’s more important than ever to start your day with a well-balanced, protein-packed breakfast. And the big thing with this school year will be getting the kids involved in making breakfast. That’s what I call starting the day off right. And that’s why I’m impressed with Smithfield’s partnership with No Kid Hungry. They are talking about the importance of a wholesome breakfast in the morning. For all!

Studies show that students are more likely to attend school and perform better on standardized tests when they have a hearty and wholesome breakfast in the morning. This year when you’re making your back-to-school list, pencil in breakfast to ensure that students are getting the nutrition they need first thing in the morning. And this is where the partnership comes in – Smithfield is partnering with No Kid Hungry for a second year in a row, to ensure that EVERYONE has access to this essential tool. This year they are doubling the donation to two million meals to support the organization’s in-school breakfast programs, to ensure the 1 in 6 American children struggling with hunger can check this item off their list as well.

Over the summer, two things happened to change our breakfast routine for back to school.

For one, our chickens started laying regular eggs and the kids discovered that not only do they love eggs in the morning, but they love poached eggs – like the kind you use for Eggs Benedict. For another thing, we tried Eggs Benedict in a restaurant and the kids fell in love. Now I already knew the wonder of freshly poached eggs, homemade Hollandaise sauce, and some sort of meat as well, but we had Sausage Benedict at the restaurant. Talk about a game changer! We all fell in love.

I like to mix things up with Eggs Benedict so I thought of a few things. Of course, the sausage is key. Then I thought – biscuits!! English muffins are fun, but biscuits are next level. Lastly, I needed a kid-friendly topping. Avocado. It’s full of nutrients and fun for all of us. And my last back to school breakfast requirement was for it to be easy to make as well.

And that’s where Smithfield Fully Cooked Breakfast Sandwiches come in!

Do you always find yourself in a hurry before work and school as well? These should be your weekday staple! The breakfast sandwiches are convenient and are available on-the-go during your morning rush. These new Southern-style biscuits are fully cooked and microwaveable, so you can get a hearty and flavorful breakfast in seconds. And there are options! Hometown Original Sausage, Maple Sausage, and Southern Style Chicken varieties. YUM. Each biscuit is made with real buttermilk for a down-home, made-from-scratch taste. That’s why I love Smithfield. They make the back to school transition better for us!

Avocado and Sausage Kid-Friendly Eggs Benedict:

What You Need:

4 Smithfield Fully Cooked Breakfast Sandwiches (1 package)
4 eggs
1/2 cup mayonnaise
2-3 Tbsp lemon juice
1 Tbsp white or rice vinegar
1 Tbsp white
1/8 tsp paprika
1/4 tsp salt and pepper
1/2 avocado

What You Do:

1 – Cook the Smithfield Fully Cooked Breakfast Sandwiches according to package, and take off the top biscuits.

2 – Whisk together a quick Hollandaise of mayo, lemon juice, paprika, water, salt and pepper, and set aside.

3 – Bring a saucepan with 1.5 inches of water to a simmer and break the eggs into the water, spacing them apart

4 – Cover the pot, turn off the heat, and wait four minutes – until the whites are set and the yolks are soft

5 – Remove them with a slotted spoon and place them VERY gently onto the sausage, and then top them with avocado

6 – Top the avocado with Hollandaise sauce and then replace the top part of the biscuits
