Whatever your pleasure and whatever your stress, cookies are the answer! I have the three “Ps” right now – pandemic, postpartum, presidential. Good times, right? Not that I need to write out my life story here about that – that’s what my Friday posts are for. Really quick funny story, though. Cassidy has been helping me with work for the last three weeks or so and we were looking up a recipe on a blog to get ingredients and he loudly sighed and said, “I just need the ingredients – not the life story!” I thought that was funny because I, his wife, am a blogger! And I do write a lot. For me, it’s the life stories mixed with tons of pop-up ads. You will never see that here. And you can easily skip my life story and just get to the cookies. They are, in fact, divine.
No Bake Pumpkin Oatmeal Cookies:
What You Need:
7 tbsp pumpkin puree
½ cup sugar
¼ cup butter (about half a stick)
3 tbsp whole milk
1 tsp vanilla extract
2 cups quick-cooking oats
1 tsp ground cinnamon
¼ tsp ground nutmeg
Yields: Approx. 12-15 cookies
What You Do:
1 – First, line a cookie sheet with wax paper and then set aside.
2 – Add pumpkin puree, sugar, butter and milk into a medium saucepan.
3 – Warm all ingredients over medium heat and stir constantly, and then remove from heat.
4 – Add vanilla extract to the pumpkin mixture and stir.
5 – Add oats, cinnamon and nutmeg to the pumpkin mixture and fold until all ingredients are well-combined.
6 – Then, drop about 2-3 tbsp of batter onto the lined baking sheet, and shape it into a disc, about 1 ½ inches in diameter and half an inch tall.
7 – Allow to chill in the fridge for about an hour.
And here’s one last life story tidbit. I am not working on recipes throughout my little “maternity leave.” I planned out all of this beforehand. Sheesh, you think I have time to make cookies daily?
