Mini Strawberry Cheesecakes Recipe

What does your Valentine’s Day need? It needs Mini Strawberry Cheesecakes, of course!

Mini Strawberry Cheesecakes are an easy and fun Valentine's Day surprise, but they're also perfect for brunches, Mother's Day, and all events.

Any day can include these, but lately I think of things with berries as being Valentine’s Day themed. That said, I can totally see them on Mother’s Day, at brunches, for Easter, and on random gloomy Mondays. We seem to have a lot of gloomy days lately, although more light is coming. I notice it more and more every day. I’ve had such a penchant for sweets lately, even though I’m “supposed to be eating less sugar.” I put that in quotes because no one told me I had to do that; I just always do that in my third trimester. Or preferably, before it. That said, these are really pretty worth it and not sickeningly sweet at all. I think they’re perfect, and I never want to get to a point in life in which I would not allow myself a mini cheesecake like this.

Let’s just say it’s not going to happen.

Mini Strawberry Cheesecakes Recipe:

What You Need:

1 cup crushed graham crackers (approx. 6 standard size graham crackers, pulsed in a food processor)
3 Tbsp melted butter
12 oz. cream cheese, softened
2 eggs
½ cup sour cream
½ cup granulated sugar
12 strawberries, divided

Yields: approx. one dozen mini cheesecakes

What You Do:

1 – First, preheat oven to 325 degrees F.

2 – Then, line a muffin tin with paper liners and set aside.

3 – In a small bowl, mix together graham cracker crumbs and melted butter.

4 – Scoop about 1 ½ Tbsp of the graham cracker mixture into each section of the muffin tin and press down evenly; and then bake for 10 minutes.

5 – In a large bowl, mix together cream cheese, eggs, sour cream and sugar with an electric mixer. Beat until smooth.

6 – Cut off the top of 6 strawberries and cut into small pieces. Fold into the cream cheese mixture.

7 – Scoop the cream cheese and strawberry mixture into each section of the muffin tin, right on top of the graham cracker crust.

8 – And, then bake for 25 minutes.

9 – Allow to cool before topping with a strawberry half (you can choose to keep the green leaf/stem or cut it off).

10 – Then, serve and enjoy!
