I’m all rumpled and disoriented because we just got back from Brooklyn a few hours ago. Between the seven Bowmans (four humans, 3 non-chicken pets), we were split up into four places! It was definitely nutty. Cassidy and I had these plans to be a huge part of a birthday surprise party for one of his best friends/groomsmen. We decided only a few days ago to make a date night of it and get a hotel in NYC. That worked to our benefit because we had a Sunday night reservation and got a free upgrade to a king room with a private balcony. It also had a weird one-way mirror that looked into the shower. Interesting..
My sister and mom were tag-teaming a fun kid sleepover and the dogs were scheduled to be boarded. Junie the cat always stays home with a cat sitter checking in on her. The problem? Astro got a viral infection a few days before our trip and we had to get him in to see a doctor during Saturday urgent care hours. So he got a prescription for doggy antibiotics and a restriction against boarding. So we boarded Athena alone (sob) and my mom and sister inherited our weird little dog too!
So for our part, we were stop #1 for a birthday scavenger hunt, where the birthday boy picked up good friends at different locations and got hints for the next place/person. We pretended we were buskers at the Brooklyn Bowl and got permission to stand in the alleyway with Cassidy playing guitar. I held up a sign with song lyrics and we were wearing shirts that I won’t write here, because they had bad words written on them, but what fun to see his face when he spotted us in the alley!
Then we all got into Ubers and raced around the city picking up friends. The second to last stop was Brooklyn’s Escape Room. We had one hour to complete the challenge – and get out of a dungeon we were blindfolded and locked into.
I meant to put a picture here but it has the bad words on it. Oh well. That doesn’t really fly with my apple pie recipe post. Let’s just say it rocked. The last stop was his favorite BBQ restaurant, but what he didn’t know, is that 55 of his loved ones were already there waiting. There was music. There was cake. And there was some serious BBQ. That’s my weekend!
Mini Caramel Apple Pie Recipe:
What You Need:
Sugar Cookie Dough
8 oz. of Cream Cheese
1 cup of Marshmallow Fluff
Caramel Ice Cream Topping
What You Do:
1 – Start by rolling your sugar cookie dough into 1 – 2 inch balls and placing them on a cookie sheet
2 – Bake at 350 degrees for about 11-13 minutes and until edges are golden, and let cool completely
3 – In a large mixing bowl mix your cream cheese and marshmallow fluff until smooth
4 – Spread mixture onto cooled cookies
5 – Top cookie with apples and drizzle with caramel
6 – Top with walnuts and enjoy!
