In an effort to celebrate the spots that make Toronto special, this article is highlighting Demetres. Specifically, let’s meet the high-quality ingredients that make this Toronto establishment shine.

Whether you grew up in the GTA or have visited at some point in the last 35 years, you probably know Demetres. The chain of upscale dessert restaurants, serving decadent dishes since 1989, is practically a household name. It’s an institution that’s sweetened countless kids’ birthday parties, first dates, family nights, wedding events and more.

In an effort to celebrate the spots that make Toronto special, this article is highlighting Demetres. Specifically, let’s meet the high-quality ingredients that make this Toronto establishment shine.

Farm Fresh Cream

Southern Ontario is home to rolling hills, verdant pastures and some of the finest farmland in Canada. It makes perfect sense that an artisan dessert and ice cream purveyor would capitalize on the surrounding abundance. In their ice creams, Demetres uses the “best quality dairy” they can find “right here in Ontario.”You can taste the local flair in the final product, with that telltale Ontario dairy adding richness, buttery notes and body to Demetres’ ice creams.

Barry Callebaut Chocolate

1996 was a significant year for chocolate, marking the merger between Cacao Barry and Callebaut. The former was a French chocolatier dating back to the mid-1800s, while the latter was a Belgian chocolate artisan world-renowned for its finesse. When the two teamed up, they produced a line of chocolate products melding their attention to detail and history of craftsmanship.

All that history makes its way to the plate at Demetres, which uses top-tier Barry Callebaut chocolate in its waffle dishes, crepe dishes, ice creams, parfaits and cakes.

Madagascar Vanilla

All vanilla isn’t created equal. On the lower end of the spectrum, you’ll find vanilla essence, which contains little or no real vanilla, relying instead on synthetic vanillin. And on the higher end, you have “100% real Madagascar vanilla,” generally agreed upon by experts and gourmands as the gold standard in vanilla. This is the type of vanilla Demetres uses in its desserts, lending each vanilla-forward warm complexity and creamy spice.

Fresh Fruit Purees

It isn’t all creams and chocolates at Demetres. The restaurants also offer sorbettos and iced drinks suitable for vegan diners, featuring ample fresh fruits and fruit purees. When the weather in Toronto reaches its sweltering summer high, vegans and non-vegans alike cool off with these refreshing, fruit-forward dessert dishes. (Check out the “Mount Lychee” smoothie, which pairs that sweet and acidic lychee with floral rose and tart raspberry).

Small-Batch Roasted Toronto Espresso Beans

Toronto takes its coffee seriously. The city is chock full of independent shops and roasters elevating their craft with single-origin beans and time-honoured roasting techniques. Naturally, when Demetres needed beans for its popular series of iced coffees, they partnered with the city’s best and brightest. From their classic iced cappuccino to their “Dark Haze” blend of Nutella, cream and espresso, the company foregrounds Toronto’s passion for coffee roasting.

These ingredients form the backbone of Toronto’s favourite dessert spot. When you add them to Demetres’ modern interiors, locally sourced menu artwork and white-glove service, you get a recipe for the perfect dessert restaurant.
