It’s a new year and a new decade, and there’s SO much to celebrate. So that’s why we start it off with making moments with those who matter the most. Seriously, we started on January 1st, in fact! We had our wonderful four houseguests staying with us, as well as Cassidy’s dear friend, Steve, as well as Cassidy’s parents. Now that was a party! I perfected my Loaded Potato Nachos recipe right then and there, and have served it a few times since. It goes fast! We believe that sharing is caring, you see. And that’s why we give our loved ones the best tasting, most fun fries!

So as you know, we believe that fries are meant to be shared. Loaded Potato Nachos:
What You Need:
1 package McCain Dip’n Wedges
10 bacon strips, fully cooked and chopped
1 can black olives, drained and sliced
1 avocado, sliced
2 tomatoes, seeded and chopped
1/2 can black beans, drained and warmed
1/2 cup salsa
1 cup cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
Dollop of Sour cream
Ingredients for Nachos
Yields – 8 servings
What You Do:
1 – First, bake McCain Dip’n Wedges according to package directions.
2 – And then, transfer the fries to an ovenproof skillet (ours is 10-in.).
3 – Then, top your McCain Dip’n Wedges with bacon, olives, tomatoes, salsa, beans, avocados, and both cheeses.
4 – And then you will return the skillet to the oven for 5 minutes, or until cheese is melted.
5 – Lastly, top with sour cream and serve!

Dang! I wish I had read this before the Superbowl yesterday. I love that it’s in one skillet – easy clean up is A+ in my book. I already love nachos, adding potatoes is something I never would have thought of. YUM.
