Hey, everyone! I first made this recipe about four years ago now, which I can’t believe, but I sort of hid it in a larger themed post about Scarlet coming with us to see Trey Anastasio at the Academy of Music, and he played her request! She was only seven then, lest she think such occurrences happen to everyone. Ok, so a year ago this week she ALSO saw Bruce Hornsby live and HE played her request as well, and read her cute note aloud on stage. I think what I’m saying is that there’s some Luck of the Irish there. I swear I came here to talk about food, and this is one of our favorite recipes. Personally I love St. Patrick’s Day recipes, and this awesome lighter spinach dip with baked chips is so excellent and just what we need this year; all year!
