First things first. Hi. Happy Easter. Happy Spring Break? This begins our week. I get excited, because I have big dreams for road trips and fun in the sun, but April in New England is rather tricky. We can have a blizzard. Or, it can be 86 degrees like it was yesterday for Easter. Cassidy’s birthday is in mid-April and he can remember hot/cold birthdays. Our anniversary is April 26th, and sure enough, I can remember wearing a winter coat as late as then, and I’ve worn sundresses on our anniversary too. We had our wedding in late April because the rates were off the chart cheaper than having a wedding in May – wedding season – but we tried to get it as close to May as possible. It snowed the weekend before and the weekend after our wedding.
Easter was.. a little weird. We were winding up the “best week of our lives.” It was good. Best week of our lives? Maybe in some small and powerful ways. Getting baby chicks. Celebrating Cassidy’s birthday so closely, and without kids. Getting more page views for ONE POST than I swear I’ve gotten for several consecutive months. That leads to new opportunities, of course, in my dream career. Still, I woke up on Easter Sunday and I was off. I think it was a mix of allergies, dehydration, being overtired, and being nervous/stressed. I woke up dizzy. Do you ever wake up dizzy? It can be terrifying and nausea-inducing.
Whooo! I’m now home free?
What do you do when you’re dizzy? For me, I drink water and put my head down. I also lean both hands on something solid. I take deep breaths, maybe even use a little lavender oil, and focus on just one thing. It might be as silly as a game on my phone, or editing a difficult photo. All I know is that nothing was going to stop me from watching and enjoying the kids opening their Easter baskets. They were SO happy. And we were happy we pulled off the magic for another year.

By late morning I was feeling completely back to normal, although drowsy from dizzy and unsettled sleep. We hadn’t seen one of my mothers-in-law in FOUR months. She came over with my father-in-law and we set right to work dying Easter eggs.
Then we celebrated all that we had missed in the last four months – birthdays, St. Patrick’s Day, etc. – with corned beef and cabbage, potatoes, carrots, homemade cole slaw, beet salad, snowflake rolls with homemade honey butter, and leftover birthday cake and ice cream. Then we played outside for hours, and played with the baby chicks for a bit. We don’t want to overstimulate them, but I think getting them comfortable with us is important too. One sat in my hand for five minutes today and I wasn’t holding her. I had my hand resting on the floor of the chicken nursery, and she sat companionably with/on me.
So, tell me. What do you do for occasional dizziness? Or even constant dizziness? How do you bond with chickens? What did you eat for Easter dinner? What is your favorite recipe using leftover hard-boiled* Easter eggs. I’ll show you mine right now:
Avocado Egg Salad Recipe:
- 8 leftover Easter Egg Hard Boiled Eggs, peeled of course
- 2 whole Avocados, Pitted and without skin
- 4 Tbsp Mayo
- 1 Tbsp mustard of choice, or enough to taste
- 3 teaspoons Red Wine Vinegar
- 1/2 teaspoon salt
- Pepper To Taste
- 1/2 tsp Paptrika
- Combine your ingredients in a food processor
- Pulse a few times until it reaches your desired consistency - smooth or chunky
- You may need to scrape the bowl a few times
- Taste egg salad and add more seasoning if desired
- Serve on a sandwich and cut into neat triangles or finger sandwiches for fun
