What the what? Such strange times. I don’t know how to keep saying that in different ways. I guess one day I’ll be thankful I told my tales and my inner thoughts on my blog, even on sponsored posts and on these here recipe posts. This isn’t Finish the Sentence Friday so I won’t go off on 17,000 tangents today, but it’s a strange time! It’s full of contradictions. The big cities are healing, but the virus still rages on. Businesses are opening, but is that ok? I feel stressed, but then have long luxurious days in the hammock. The pregnancy continues to go well, the puppy is naughty and at my feet now, and the Pop Tarts are out of the air fryer. Isn’t it grand?
Homemade Pop Tarts:
What You Need:
1 cup strawberries
1/8 cup white sugar
I package rolled unbaked pie crust (2 in package)
½ cup powdered sugar
1 teaspoon of lemon juice
Prep time: 30 minutes
Cook time: 8-10 minutes
4 pop tarts
What You Do:
1 – First, in a microwavable bowl, mix the strawberries and sugar and place in the microwave for 5 minutes.
2 – And then stir and put back in for another 2 minutes – the filling should now look like a jelly (a runny one).
3 – Then, let it cool for at least 30 minutes.
4 – Roll out dough sheets and cut each one into a large square.
5 – And then from there, create 4 equal squares per sheet.
6 – Add about a tablespoon of filling to the top of 4 of the pastry sheets.
7 – Place the tops on each of the 4 bottoms with filling and take a fork to press in around the edges.
8 – Spray each pop tart front and back with a nonstick spray and cook in the air fryer for 7-10 minutes.
9 – Check them for browning because you do not want to burn them, but you do want them a golden color.
10 – When done, place on cooling rack for 30-45 minutes.
11 – Lastly, mix lemon juice and powdered sugar to drizzle for icing, and then add sprinkles.
And then, enjoy! These are SO good. I always think they’d make a good breakfast, but with being pregnant I generally make (slightly) better choices in the morning. Only slightly, though.
